From Kneading to Wood-Fired Perfection: The Ultimate Italian Pizza Class

Taking a family pizza-making class in Italy was easily the highlight of our entire trip. Tucked away in a charming courtyard, the hands-on experience gave us an authentic look into the rich tradition of true Neapolitan pizza while bringing our family together for an unforgettable afternoon. Our chef taught us that great pizza starts long before the oven. We learned the exact ratios of Tipo 00 flour, water, yeast, and salt, along with proper kneading techniques to build structure without overworking the dough. We discovered how crucial proofing time is for flavor and digestibility, learning why traditional dough ferments for 24 to 48 hours. Instead of using rolling pins, we practiced the classic slap and stretch method with our hands to preserve the air pockets in the crust for a light, perfectly airy outer rim. We also learned the golden rule of Italian topping: less is more. Using fresh San Marzano tomatoes, mozzarella di bufala, basil, and a drizzle of extra virgin olive oil allowed every ingredient to shine without weighing down the crust. Watching our creations cook in a 900-degree wood-fired oven in under 90 seconds was incredible, and we learned how to read the heat spots to rotate the pizzas with a long peel for an even, leopard-spotted char. The instructor was exceptionally patient, warm, and engaging with everyone in our group, making sure every family member felt like a master chef by the end of the session. Sitting down together at a long wooden table to eat the very pizzas we made—crispy, chewy, and bursting with fresh flavor—was the ultimate reward. If you are traveling through Italy with family, this experience is an absolute must-do that will permanently elevate your home cooking.

Pizza and Tiramisu Class

My Husband and I took this class as a part of our honeymoon and we had the most amazing time on our class with Gianmaria! He was incredibly welcoming, knowledgeable and held a great class. The location of the class was in a great part of the city and Gianmaria at the end of our class told us and the other couple in the class about the nightlife. We would 100% recommend coming and taking a class here whether its the pizza class we took or one of their other classes focusing on pasta or gelato; it’s an incredible experience that won’t disappoint!
