My wife and I had the pleasure of taking a cooking class with Anchal Bhalla, director of Tastesutra Cooking School in Delhi, and it was an outstanding experience from beginning to end. One thing that immediately stood out to us is that Tastesutra is a dedicated cooking school that has been operating for 11 years. Having an actual school environment, rather than taking a class in someone’s home kitchen, creates a different kind of experience. Everything is designed around teaching, learning, and enjoying the food, and it reflects the experience Anchal has developed over more than a decade of teaching. We came away with a much deeper understanding of what makes Indian food so vibrant and delicious—and, perhaps more importantly, what it is NOT about. It’s not about using dozens of different spices, complicated procedures, or making food so spicy that you can’t taste anything else. One of my favorite lessons was Anchal’s explanation of the seven spices that form the foundation of the Indian spice palate. She demonstrated that when you understand how these flavors work together, you can create an enormous variety of Indian dishes without needing a pantry filled with dozens of spices. Anchal showed us how thoughtful combinations of spices can create layers of aromatic flavor that excite the palate rather than simply burn your tongue. As a culinary educator myself, I especially appreciated how expert she is as a cook, but also as a great teacher. The concepts and techniques she shared made perfect sense and were immediately applicable in a home kitchen. She has a wonderful ability to explain the "why" behind what she does, which transforms the class from simply watching someone cook into actually learning HOW to cook. Anchal is also charismatic, entertaining, and genuinely fascinating. Her stories about her own experiences, the way she cooks for her family, and her insights into the health benefits of Indian herbs and spices—and how their use changes with the seasons—added another dimension to the experience. I highly recommend taking a class at Tastesutra. You’ll certainly leave with a fantastic meal in your belly, but you’ll also leave with a new way of thinking about Indian cooking and culinary lessons that you’ll find yourself pondering—and using—for years to come.

I learnt so much in this workshop, highly recommend! It showed me how healthy, versatile and balanced the Indian cuisine can be in comparison to the restaurant food. Also got a lot of practical tips on how to use spices and when, and we got a list of recipes in the end to take home to try!

This was such a wonderful cooking experience. Anchal was absolutely lovely, accommodating me after I confirmed the booking at late notice. The kitchen was clean and had a lot of space, despite me being the only person on the day (monsoon season). Anchal was an excellent cook and teacher, not only did I learn hoe to cook several home staples of North India, Anchal also provided extraordinary insight into food culture, customs, and the science behind a healthy, balanced, and varied Indian diet. I learnt so much, I wouod highly recommend this to everyone, whether your a beginner Indian food cook or already have experience like me... you will learn something new regardless! The setting was professional, efficient and spotless. Our instructor was a great teacher — strong presentation and communication skills. She moved through the multi-course menu with us but still answered every question we had about the dishes but also about India, food, family life. She was really great. Good sense of humor, kind person.

What a great experience this turned out to be. Sonal was an amazing teacher and person. Her instructions made it seem easy, but I guess we'll see when I try these recipes somewhere else. What a delicious meal and so much variety to work with in the future. The time went by fast but it was amazing how much we got done in two hours and then - what a wonderful feast! Thank you Sonal! If you’re considering a cooking class in Delhi, I can highly recommend Tastesutra. I attended my second class there today, and once again it was an exceptional experience. Sonal, our chef for the session, was knowledgeable, warm, and incredibly welcoming. From the moment I walked in, the atmosphere in the studio made me feel right at home. What I loved most was how hands-on the class was. We were involved in every step of the process, which not only made the experience fun but also gave me the confidence to recreate the dishes at home. Sonal explained the spices beautifully—how to use them, when to add them, and the flavors they bring. A special highlight of the day was making three different types of bread: Roti, Naan, and Baratha. Learning to prepare them from scratch was both enjoyable and rewarding.
