must visit at Christmas
Must visit a city that has surprised me despite having visited Germany more than 20 times, with an unparalleled charm like Nürnberg but different and unique, even at Christmas with the charm of its Weihnachtsmarkt

Perhaps as expected for low-season
We were met and picked up at our hotel no problem in Bamberg and it was only the four of us. Our tour guide, while very nice and accommodating also spoke English as possibly a 3rd language--his native being Portuguese and also speaking German. As such there was a distinct language barrier on the tour. In addition, I don't think he had a good grasp of Bamberg history and on some occasions was clearly answering our questions on the fly. That being said, however, we did book a tour on a Sunday in January. I was surprised they were available at all so he gave us a decent walk of the city and some interesting if not entirely factual information.

The Rose Garden, Little Venice, churches, castles....
Was picked up right at our hotel on time, our tour guide was very knowledgeable and showed us a great time in Bamberg and ended the tour with taking us to the Smoked beer house. A great way to see the city and get a good workout in!
