My wife and I took the Paris Croissant and Breakfast Pastry Class with Gail and it was one of the highlights of our time in Paris. The class was very well organized and Gail is an excellent instructor. What we appreciated most was her insight into the small tips and techniques that can make the difference between an okay pastry and a great one. She explained the “why” behind each step clearly and shared practical advice that went beyond just following a recipe. Gail is patient, kind, and especially good at helping people who need a bit more support. She did this in a way that never singled anyone out... just quiet, encouraging guidance that made everyone feel comfortable and capable. The atmosphere stayed relaxed and enjoyable the whole time. Recommend you do this early in your trip...what you make should last you all week. Class was well taught and monitored to make sure you are performing the critical steps correctly. Chef was friendly and also suggested other areas of town to vist.

Worth the time and effort. I am not a baker nor am I that great in the cooking department but this was an enjoyable experience that taught me about the techniques involved in making a croissant. Plus, a fun environment with the added benefit of eating!
