This class was truly exceptional! We had a private class, so it cost a bit more, but it was absolutely worth it! We learned how to make two different types of tamales with sauces, and got to enjoy our creations and also traditional cocoa after dinner. Our host was an incredibly good cook. He not only taught us how to make tamales, he taught us about the science behind the food preparation and answered all of my many questions. He also sent us the recipes for the tamales we made, as well as some other recipes we had discussed during the class, after our class. He was also an incredibly kind and thoughtful host. We had wonderful conversation during the class and the dinner and then he asked us to let him know we got home safely after our class. As a bonus, he has two two sweet, adorable kittens, which elevated the experience for us.
I took Jim’s tamale cooking class on Sunday night and it was hands down one of the best food experiences I’ve had in Mexico. Jim is an incredible host. He’s deeply knowledgeable about Mexican culture and cuisine, and he explains why things are done a certain way, not just how. The level of detail he shared around technique, ingredients, and tradition made the class feel thoughtful and special. And the tamales… unreal. I’ve had a lot of tamales and these were easily the best I’ve ever eaten. Perfectly moist, flavorful, and nothing like the dry versions you sometimes get elsewhere. Whether you're a local or a tourist, if you’re looking for a cooking class that’s authentic, educational, and genuinely fun, I can’t recommend this enough.
We did two fantastic cooking classes with Jim at his lovely Condesa home and can’t recommend enough if you are wanting to spend time learning more about Mexican cuisine in a relaxed environment. Jim is a kind and generous host who welcomes you into his home as though you are already friends :-) He is extremely knowledgeable and passionate and what you make is very delicious!! This is a delightful and delicious class, and I highly recommend it. We opted for a vegetarian meal and were very happy with that. Jim’s instructions and insights into our ingredients really enhanced our experience. We made 2 different types of tamales, one using banana leaf wraps and one using the more familiar corn husks. Our homemade salsas were so tasty! We loved sitting down with Jim and his assistant Vicente to enjoy what we had just created and share stories. We look forward to sharing our new recipes with friends at home. This class is a terrific way to spend an afternoon!
A not-to-be-missed experience. Jim is a fantastic chef and teacher who provided a fun and very interesting lesson that covered Mexican history, culture, and food. The other people in our class were great. It all made for a great afternoon and Jim’s advice on where to continue the evening set us up for a very fun night.

Jim was an excellent teacher, and also showed flexibility for our schedules, eating preferences, and differing cooking experiences. The food outcome was delicious, and the well-orchestrated experience that included teaching about foods of the regions, cooking techniques, and of course, complementary beverages and dessert made the 4 hours a wonderful culinary excursion.

This is an absolutely fabulous class. Cone for Jim's masterful instruction, stay for his vast knowledge spanning culinary history to Egyptian politics and the Arabic language. If you miss this, you're not doing it right!

This was such a wonderful way to spend an evening in Mexico City! We highly recommend to do this with friends or family as it is such a fun time and informative as well. We were warmly welcomed into our host’s home and had an amazing time. One of the best nights in the city for sure.
