Fresh pasta with a view near Asti – Langhe, Roero, Monferrato

Description
Together, we will explore Piedmontese culinary traditions through a Tuscan perspective, combining the techniques and flavors of two of Italy’s most renowned gastronomic regions. We will prepare traditional tajarin, ravioli del plin, and authentic Tuscan pici, following the original recipes. You will learn how to make two different types of fresh pasta dough: an egg-based dough for the Piedmontese pasta and an egg-free dough for the pici. Each preparation will introduce you to specific traditional techniques, from the delicate “plin” used to shape the ravioli to the hand-rolling technique used to make pici. The cooking class will also include a tasting of a selection of local wines. This is a unique opportunity to discover the roots and secrets of two extraordinary Italian culinary traditions, learning how to make the most of fresh ingredients and create dishes that tell the stories and express the authentic flavors of their regions.

The pace was relaxed and the group very friendly. Andrea was an excellent teacher, taking time to explain the choice of ingredients, Italian culinary traditions and techniques to elevate our cookery. We made three types of pasta, all with different sauces, eating them together in a comfortable setting. An experience delivering great holiday memories for my family!
Andrea’s fresh pasta cooking class was absolutely amazing and went far beyond our expectations. Andrea was warm, patient, very accommodating, and made the whole experience feel personal and special. He was incredible with the kids, keeping them involved and excited, while also making sure the adults had a great time and learned a lot. The setting was beautiful, the pasta was fresh and delicious, and the entire class felt authentic, relaxed, and very well organized. Andrea clearly loves what he does, and that made the experience even better. We all left very happy and grateful. I would highly recommend this class to families, couples, or anyone looking for a real Italian cooking experience in a beautiful place. Truly one of the highlights of our trip.
Was very nice, enthusiastic host/cook in a nice location. Learned how to make Italian fresh pasta. A laborious process with a great result. Then at long table with beautiful views while enjoying tasty local wines
I gave this course to my partner being passionate about cooking and wanting to have a little different experience. It was great and fun to cook with chef Andrea, who gave us his knowledge and taught us some really useful little tricks. We prepared two different doughs and prepared plin, tajarin and picci, accompanied by two different salars one with tomatoes and the other with sausage. We had lunch outside with a view and tasted two different types of wine. We were very happy and recommend it or who wants to do something different. If I really have to find a flaw is that in the description it said that there would also be a dessert and instead there was not.
The cooking class was superb. Andrea is a great chef and will teach you to make three types of pasta each with a different delicious sauce. Definitely a highlight of the trip and very reasonably priced.
Andrea and his wife Catrina were excellent hosts. We were 4 couples who enjoy cooking classes. We prepared several pasta dishes with local ingredients, especially the tomatoes fresh from their garden. We dined on all of the pastas, plus a lovely desert. He also sent all the recipes so we may cook at home. I would strongly recommend this cooking experience
It's a very interesting workshop. Andrea is an inspired professional cook who loves to tell. Everything was well prepared. We've learned a lot. It would be even nicer if we started with coffee and were offered something during the 4 hour class. The friends' club was so faint from hunger that the concentration disappeared. We only asked for some water ourselves. If 5 euros is added, some goodies can be put on the table and it becomes even more fun. Price quality is fine.
Amazing cooking class with Andrea! He was super nice and very friendly, we prepared 3 different types of pasta with 3 sauces and a panna cotta for dessert! Beautiful view and a very quiet place to then taste our preparations on the terrace:) I recommend 100% this cooking course and thank Andrea for listening all the time!
A very good experience. The chef was very good and nice. The food we were cooking included pasta, pesto, panna cotta, vegetables. It was fun and interesting making it together and it tasted so good. We learned a lot. We recommend this experience.
It was an original, engaging and fun experience. Andrea is a very competent chef and a great host. Also highly recommended as a gift idea!
