マナヴィでは、ワイン造りがパフォーマンスではなく、生きた伝統であるカヘティの日常の中心に足を踏み入れます。 この小さな村は、家族経営のワインセラーとブドウ畑で知られており、現在も代々受け継がれてきた方法でワインが生産されています。 ここでは、ワインのテイスティングは形式的なものではなく、ストーリーや笑い、おもてなしといったものを共有するためのものです。 クヴェヴリ（qvevri）と呼ばれる大きな粘土容器を地中に埋めて造られることが多いカヘティア地方のワインを試飲し、ワインに深みと土臭い魂を与えます。 その傍らでは、ブドウ果汁とナッツを使った手作りのジョージアで愛されている天然菓子「チャーチケラ」のテイスティングも楽しめます。 その作り方を見て、新鮮な味を味わうことは、ジョージアの田舎の生活に直接つながります。
バディアウリでは、伝統的なジョージアのホームベーカリーに迎えられ、焼きたてのパンの香りが漂い、言葉の前におもてなしが捧げられます。 この村は、トーンと呼ばれる深い粘土のオーブンで焼かれたカヌー型の長いパン、ショティス・プリで有名です。この技術は、何世紀にもわたって変わりません。
ボドベでは、4世紀にグルジアにキリスト教をもたらした女性、聖ニノ修道院というグルジアで最も神聖で平和な場所を訪れます。 庭園、森に覆われた丘、アラザニ渓谷を挟んだ開けた眺めに囲まれたこの修道院は、史跡というよりは、静かな思索の場のように感じられます。
