We’re glad the tour gave you the chance to discover Palermo and its street-food culture during your short stay. Just to clarify a couple of points: our meeting instructions say to meet at the main gate, in front of the staircase between the two golden lions, rather than on the staircase itself. We will nevertheless review the wording to make sure it is as clear as possible for evening guests. Regarding the spleen sandwich, this is one of the traditional staples of Palermo street food, and at the food stalls we visit there simply isn’t a plain bun or a separate alternative available. For this reason, guests who don’t feel comfortable trying it are absolutely welcome to skip that tasting. The same principle applies to Coca-Cola: where possible, we offer a Sicilian soft-drink alternative, but we deliberately avoid standard international soft drinks because they are not part of the local street-food tradition we are presenting. We are also very careful to check dietary restrictions with guests before the tour, through our office and booking process, so that we can prepare suitable substitutions whenever they are possible. When no dietary restriction or specific requirement is communicated to us in advance, however, the guide cannot reasonably know that an alternative will be needed, especially when visiting small independent street-food stalls where the choice is naturally limited. We appreciate your constructive comments and will certainly take them into consideration, while also preserving what makes this tour what it is: an authentic introduction to Palermo’s traditional street food rather than a menu where every item can be replaced.
