What an amazing experience! The walking tour with Chef Julio was so informative. Shopping at the local markets very educational. The cooking class was fun work with Chef Julio and his lovely assistant Dulce. I’d love to do another class!

You learn more than just how to make great Mexican food; you explore the various sauces and types of chilies in a hands-on experience that includes both preparing and eating the dishes. Chef Julio and Dulce made it look easy, and it's definitely worthwhile to take these skills home and cook more..

I’ve done cooking classes before, but Gaby’s was on a completely different level. Everything was from scratch! we learned how to pick out fresh ingredients, where to find the best local food, and then got to cook and eat everything with an amazing view. I honestly lost count of how many things we made! Every dish had a gourmet chef twist and tasted like something you’d order at a restaurant. And I grew up eating Mexican food, so I’m not easily impressed 😂. The fact that we actually helped make all of this ourselves made it even better. We’ll definitely be coming back to try the other classes. If you love food, you HAVE to take this class!

Our experience with Aldo and Julio was incredible! Both hosts were very personable and engaging. Chef Julio is so knowledgeable about Mexican history and food! It was great to wander around the city and get some great local food recommendation as well as learn about the markets and how to pick good produce. After that, we had the best experience preparing and enjoying a variety of different salsas and other Mexican food. It was a wonderful experience that I would highly recommend.

Chef Julio was incredibly accommodating of our preference for vegetarian food and went above and beyond to make sure we had an amazing experience. He introduced us to Mexican cuisine in such a beautiful and authentic way, teaching us about local produce, how to identify the best ingredients, and the culture and traditions behind the food. He even took us on a cultural tour of the city, giving us a glimpse into Puerto Vallarta beyond what you would experience as a tourist. We got to cook an absolutely lavish Mexican menu, and every part of the experience felt thoughtful, personal, and full of warmth. His assistant, Came, was with us throughout the experience and captured so many beautiful memories for us along the way. His sous chef, Aldo, was equally wonderful — so warm, welcoming, helpful, and genuinely happy to have us there. What made the experience truly special was how quickly it stopped feeling like we were guests at a cooking class and started feeling like we were spending the day with family. The warmth, hospitality, laughter, food, culture, and genuine connection made it an experience we will remember for a very long time. Wow! What an amazing experience! Booked a cooking class with 8 of my family. It was wonderful! The class starts out with a brief lesson on the history of the restaurant (the Chef’s grandparent’s naught the building ~100 years ago; his mother converted part of it into a humble, working-class lunch counter, and it ultimately became “Gaby’s”) then it’s off to the market to purchase ingredients for the meal you’re about to prepare. Chef Julio leads the walking tour, and it’s clear he knows everybody in the market and they know him! You pick out the freshest ingredients and then get a van back to the restaurant. Then—for me at least—the real fun begins. Chef Julio Castillo and his staff teach you and your group how to make the restaurant’s signature dishes. Everyone participates in preparing everything. You can do as much or as little as you want-no pressure—but even middle school kids can do a lot! The end result is amazing! Honestly, the best ceviche and chicken mole I have ever had. If you’re a foodie or someone who likes to cook, this is 100% worth it!

This was a 5 star experience . I’ve taken a lot of cooking classes and this was by far the best. We learned the history of Puerta Vallarta. We learned where the local markets are. We learned how to pick out vegetables and peppers. ( I thought I knew) We made various salsas and sauces and made the best chile relleno I’ve ever had. It was a lot of fun in a beautiful environment. Can’t wait to go to Gaby’s for dinner now! Julio was an excellent teacher. I highly recommend this cooking class
