'Gourmet' è una parola francese perché i nostri vicini del nord sanno qualcosa sul mangiare (bene) e sul bere (molto bene). Andiamo in Gallia per farci spiegare alcune cose sui loro tesori nazionali. Ovvero: formaggi, vini, salumi e La Buona Vita in genere. Concluderemo la giornata a Hondarribia con dei pintxos. Niente può andare storto.

Itinerario
Alzarsi presto per intraprendere un'avventura gastronomica attraverso la Côte Basque, una delle zone più pittoresche della costa atlantica, non dovrebbe essere troppo difficile. Allo stesso modo, iniziando la giornata dirigendosi a San Juan de Luz per visitare un casaro.
L'affinatore è colui che, una volta ricevuto il formaggio dai produttori, lo conserva fino a quando il pezzo raggiunge il punto di maturazione, idoneo alla vendita. A Saint Jean de Luz proveremo una selezione di formaggi appositamente "affinati" dal nostro affinatore e li abbineremo - ovviamente - a un buon vino francese di Irulegui.
Protetto da una baia, Saint Jean de Luz è un tranquillo villaggio estivo e di pescatori. Visiteremo la pasticceria Maison Adam dove, nel 1660 (!) crearono i famosi macaron. Allo stesso tempo, un certo Johannès de Suhigaraychipi, un corsaro francese che catturò più di 100 navi britanniche, olandesi e spagnole, stava navigando nell'area.
Di questo parleremo anche durante la nostra passeggiata per il paese, mentre visitiamo la Chiesa di San Giovanni Battista, una chiesa con spettacolari legni policromi e miniature di navi che ci ricordano quanto apprezzati fossero i miracoli del mare nell'antichità giorno.
Biarritz è tante cose: la porta d'accesso dell'Europa al surf a metà degli anni '50, uno dei pionieri del turismo balneare (hanno iniziato a promuoverlo 200 anni fa!) e uno dei luoghi più desiderati da vedere ed essere visti. Cammineremo sul lungomare ammirando il mare e i sontuosi hotel fino a raggiungere il faro alto 44 metri.
Visiteremo il colorato mercato di Les Halles per prendere il polso della vita quotidiana della città ed entrare in contatto con il meglio che la Francia ha da offrire: i suoi formaggi, salumi e panifici/pasticcerie. Se hai aspettato tutto il viaggio per fare la tua spesa gastronomica, questo è il momento. Ci fermeremo nel miglior bar del mercato, proveremo le famose ostriche, gamberi e lumache di Arcachon (se sei uno che, come noi, non solo osa mangiarle, ma le adora) e lo accompagneremo con un vino bianco Bordeaux prodigioso (che Bordeaux non è meraviglioso, eh?).
Finiremo il percorso dall'altra parte del confine, oltre il fiume Bidasoa. L'ultima (o la prima, a seconda di come la si guarda) città della costa spagnola è un luogo privilegiato con mare, fiume, baia, montagne, un quartiere di pescatori che è in prima linea nella cucina mondiale (dice il New York Times !), e in alto un quartiere murato medievale (con strade non adatte ai tacchi). A Hondarribia proveremo alcuni dei migliori pintxos in uno dei ristoranti più premiati ea stomaco pieno potremo discutere le differenze tra la cucina basca-francese e quella basca-spagnola. Dubitiamo che troverai mai una ragione per una discussione così succosa. Conclusione: torneremo a casa con lo stomaco pieno e la mente spalancata.

This tour is the most beautiful, curated experience and left my friends and I in awe of the region- for its stunning landscapes, history and of course, food. Malena, our guide, was extremely knowledgeable and engaging and we loved every bit of it. 10/10 tour, 10/10 guide, and a wonderful small company.

A spectacular tour! It was a very complete visit to various places in the area and tasting incredible gastronomy. Listening to Ernes is a real pleasure, rating that he knows a lot, loves what he does and conveys so much passion that makes the tour more than interesting! Most recommended!

I can say it was the best tour I've ever been on. Even knowing that whole area by heart has managed to surprise me. He has told us a lot of story while giving us a taste of a mix of top quality local products. I finished the tour wanting to repeat. Thank you so much!

Without a doubt, one of the best tours I have done in my life. Despite being from the area I was surprised and made me discover places I did not know. Ernes ensures that an all-day tour doesn’t get heavy or boring, quite the opposite. Each stop of the tour is thought out to detail and with very different contributions. Also, it was the first time I tasted oysters and I loved them:) The best part of the tour: a very balanced mix of culture and gastronomy (plus Ikusnahi’s professionalism).

What an amazing tour! We felt so special, like spending the day with a friend. Ernes was very knowledgeable about the basque culture and history. We sampled local regional cuisine, toured the gorgeous countryside. And learned about the history and culture of the region. Honestly it was incredible. Can’t wait to come back.

Absolutely amazing tour with Ania, she wonderful guide, so knowledgeable and very responsive to guests' requests. During the tour we tasted amazing cheeses and very good red we .food markets and market halls each experience separately , absolutely fantastic. In Biarritz we ate the most amazing oysters we 've ever eaten ( we 've eaten a lot of oysters in our lives ) . The tour is perfect for figs who love wine and food, you will not be disappointed. Annia is the super guide, we are grateful that we got to spend a memorable day with her.
We had a great time! We loved the selections of cheese, seafood, pintxos, wine, and sweets. Our guide Martin, was passionate about Basque culture and generous with sharing insights about the region's history, origins, and food trends. We got special access into a parador to see its tapestry exhibits as well as a panoramic birds eye view of the Basque coastline. Highly recommend this tour!
