Din Guide kommer att introducera dig till deras slutna system, från ekologiskt foder på fälten till högkvalitativ mjölk som används för äkta parmesan. Du får bevittna hela osttillverkningsprocessen, från ostmassa och formning till att forma de ikoniska hjulen. Därefter kan du utforska lagringslagret, där över 6 000 osthjul lagras i månader, och utveckla komplexa smaker. Lär dig hur lagring från 12 till över 36 månader förbättrar konsistens och smak. Den andra delen av turen är en provning av parmesan i olika åldrar, från milda till skarpa, nötiga profiler. Detta belyser hur smaken utvecklas över tid. Som komplement till osten kan du njuta av en kombination med DOC Lambrusco, ett mousserande rött vin från Emilia-Romagna, med ljusa, fruktiga noter och uppfriskande syra.

The morning tour was great! We got to see them taking the cheese curd from the vats and putting it in the rounds. The process was fascinating and the fact that every part of the milk is used for a purpose. There was no waste and the product you got to taste at the end was spectacular. The quality control is quite impressive.

We arrived in time to see the cheese being made. You have to schedule the tour early, around 8 to 8:30 to see the cheese being made. They only make 10 wheels per day so when they are finished, that is it for the day. The history and the process of Parmesan cheese is explained and seeing the storage is impressive. Recommended.

This is an intimate visit with a family owned parmigiana reggiano factory that truly respects the tradition and the process. They are a "closed loop" production, producing the hay that feeds the cows, raising and milking the cows, and making the cheese. The tour walks you through the small facility that makes the cheese and shows you the different stages of production. The end is a tasting of cheese of different ages paired with a lovely sparkling red from Modena. Tess is very knowledgeable about the family factory, parmigiana reggiano, and Modena food production. She was great with questions and truly enjoys interacting with visitors and talking about Modena food. It was the number one experience of our Italy trip!

Our tour guide was fantastic and very engaging with our 2 kids which made it more special for us. You wouldn’t think as a cheese farm tour as something to do as a highlight but it certainly was.
