De traditionele bereiding van Turkse koffie omvat een nauwgezet proces dat begint met het selecteren en malen van hoogwaardige koffiebonen om de perfecte fijnheid te garanderen. Wat de ervaring echter echt uitzonderlijk maakt, is de manier waarop de koffie op zand wordt gezet. In Cappadocië worden speciaal ontworpen, met zand verwarmde koperen potten, bekend als "cezve", gevuld met water, koffie en suiker, en op verwarmd zand geplaatst. Deze methode zorgt voor een zachte en gecontroleerde warmteverdeling, waardoor de smaken en aroma's van de koffie worden versterkt. Met de pot in het warme zand bereikt hij geleidelijk de gewenste temperatuur, wat resulteert in een rijk, smaakvol brouwsel.
