Dopo esserci incontrati nel quartiere di Alfama, più vicino al fiume, visitiamo uno dei più antichi negozi dove i romani producevano il Garum, una salsa di pesce dal sapore unico, equiparata a un'essenza dorata. Una perfetta introduzione e contestualizzazione a quanto segue a tavola.
A pochi minuti, dopo aver attraversato le mura della città vecchia, troveremo la nostra tappa gastronomica dove inizia un percorso di degustazione unico ed esclusivo. Questa tappa unisce un ristorante, un negozio, ma anche una sorta di laboratorio dove vengono esplorati metodi di conservazione degli alimenti, come in nessun altro luogo in Portogallo.

Much fun experience with a great host. Really learned a lot about the history of Lisbon during Roman times and how they made and persevered food using Garum. Very tasty and interesting foods using this ancient preservative to enhance the flavors. Would definitely recommend for couples and foodies!

What an incredibly interesting, fun and delicious evening. Marina was an exceptional guide and really great company. She was so knowledgable about the history of garum and was able to share that with us. The museum that we went to before our dinner was fascinating and we were happy to be exploring a different part of Lisbon. The food: One item was more delicious than the next! We ate fish prepared in ways we had never seen and probably would never have access to again. The restaurant we were at was beautiful and the manager incredibly friendly. If you are looking for an adventure this definitely fits the bill!

I went on this wonderful tour after participating in a conference in this beautiful and interesting city. It was a wonderful way to get a sense of the deep history and culture of the place, learn about sustainable seafood and 'whole fish' cooking, and of course to enjoy delicious food. This was simply an amazing food tour. Before we sat down to an incredible meal, our awesome guide Marina showed us around the historic Alfama Quarter. She had a wonderful breadth of knowledge about the history throughout the Greek, Roman, and Moorish periods. And rather than just spouting off esoteric facts, she always brought things back to some degree of modern relevance, which allowed us to really appreciate both what happened in the past and also how it applies to the present. Before the tour, I didn't even know what Garum was, and now I feel like a rather well-educated Garum amateur. The fact that it was such a big part of cuisine back in Roman days and now has been rediscovered made the meal all the richer. Cannot encourage or endorse this tour too strongly.
This walking food tour through Alfama was such a fun experience. We loved exploring the neighborhood on foot and learning about the history & local food scene along the way. Tasting five different garum sauces was really interesting and something we’d never done before, and the tour finished with an amazing five-course meal. Our guide, Livia, was great—super nice, well spoken, and very personable. She made the whole experience feel easygoing and enjoyable. Definitely recommend if you’re looking for a laid-back way to eat well and explore Lisbon.

I had read a little about the Roman production of garum years ago in a book titled "Salt", but never expected to one day be able to see and even touch some of the original stone basins in which it had been produced nearly two thousand years ago! The walking tour provided that experience, retracing the path from where fish arrived at the docks to where they were finally processed. After the walk, we all sat together and enjoyed a delicious, multi-course seafood dinner with nicely paired wines and a variety of garums incorporated into the meals. I was so full at the end! Save your appetite for this experience. Our guide, Marina, was very friendly, knowledgable, and made us feel more like friends than tourists. I highly recommend this tour for anyone visiting Lisbon who likes a nice walk, is interested in history, and loves seafood!

Fantastic tour with access to commercial buildings in Alfama with ruins right in their lobbies! Then on to a delightful food adventure of Garum. Well worth the money as the food was plentiful and excellent quality, with wines, sparkling water and coffee at the end.

Such a pleasure to experience more of Portugal's rich culinary history than every other stock standard tour (no pastel de nata here! But still an amazing egg dessert that I forgot the name for heehee). The atmosphere Marina created was like sitting down with old friends for dinner, chat, a glass or 2 of wine and tasting things I'd never heard of but would totally eat again. Umami tour is an apt name with power houses of flavor in every course. There was a lot of food... More than I could finish. Not too much walking which was great as we visited during the heat wave.
