Experience the most authentic Emilia: Parmigiano Reggiano, Traditional Balsamic Vinegar and homemade cuisine in an ancient family house in the hills of Modena. An intimate, genuine experience far from the tourist routes. We will start with a visit to a local dairy to learn about the production of Parmigiano Reggiano, from processing to seasoning, with final tasting. Then we will move to my family home, a place where recipes and traditions are handed down. Here you will discover the secrets of Traditional Balsamic Vinegar and taste different types. Afterwards, you will take part in a cooking class of Emilia to prepare tortelloni ricotta and spinach according to the real recipes of grandmother. We will conclude around the table with a home-cooked lunch: fresh pasta, local cheeses, honey, bread, Lambrusco, water and coffee. Itinerary
Guided tour of the Parmigiano Reggiano dairy with tasting. Guided tour of the production areas and the maturing warehouse. The final tasting includes 3 maturations of Parmesan and fresh ricotta.
I will welcome you in an intimate and genuine environment, where you will discover traditions that have been handed down DAno for generations. You will visit our small private vinegar factory, where the barrels of Traditional Balsamic Vinegar of Modena rest: you will be able DA closely observe the maturation process and taste different types, including finer vintages. Afterwards, you will take part in a cooking class in Emilia to learn how to prepare my grandmother's original recipes. After the cooking class we will sit together to enjoy a home-cooked lunch prepared with local ingredients: fresh pasta, cheese, honey, Cabin bread, typical dessert and a good glass of Lambrusco. A perfect experience for those who want to get to know Emilia from the inside, immersing themselves in the flavors and stories of a real Modena family.

This tour was absolutely perfect! My sister, mother and I loved the-group experience (it was just us 3!) Alice was wonderful - very educational, personable, and helpful. We loved the private tour of the cheese factory, from the start of production through a tasting at the end. Afterwards, Alice took us to a private balsamic production where the production was explained start to finish. The tasting was very informative and delicious. Then we had a private pasta making class! Our instructor was delightful, explaining all the techniques and styles of pasta. We made the dough, rolled it, cut it properly for the specific pasta type, and also filled tortelloni. They prepared the pasta with delicious sauces and provided wine with our meal. We couldn’t recommend this tour enough. It was a great length of time and was enjoyable throughout. Thank you Alice!!!

We were so looking forward to this tour and were not disappointed - it was one of our favorite days of our trip. Alice is wonderful – communicative, kind, knowledgeable, and helpful. She guided us through a parmigiano reggiano facility (with samples - amazing!) and brought us to a family-owned producer of balsamic vinegar where our cooking class also took place. Everything was authentic and delicious - we made two different pastas which were cooked while we got a tour of the estate and saw how the balsamic vinegar is produced. After this, we were led to our dining table where we enjoyed a vinegar tasting, wine, the pasta we made as well as dessert. Highly recommend!!

Absolutely outstanding tour! Alice was so friendly and knowledgeable. Learning about the region and getting a tour of the cheese and balsamic vinegar facilities was very interesting. This tour was amazing and was absolutely one of the highlights of our trip! We learned a lot (and enjoyed the tastings) at every stop on the tour: the Parmigiano Reggiano dairy, the family-run Balsamic Vinegar factory in a quaint village, and the farm where we made tortelloni and had a beautiful lunch in a picturesque setting. We found the cheese and vinegar making processes really interesting, and had a lot of fun making pasta from scratch. Alice is an excellent guide; she is very knowledgeable and personable. She made the day very special because it felt like we were being shown around by an old friend. If you want to experience some of the titans of Emilian cuisine the way the locals do (and avoid the tourist traps), this is the tour for you!

This tour was an unforgettable journey through the flavors of Emilia-Romagna, made even better by our fantastic guide, Alice. We started at a Parmigiano Reggiano dairy, where we watched the cheese being made and enjoyed a delicious tasting of aged varieties. Next, we visited a traditional acetaia to learn the secrets of balsamic vinegar. The tasting—from young to decades-old vinegars—was a true highlight. The day ended at a beautiful farm, where we made fresh tortelloni filled with ricotta and spinach, then sat down to enjoy them with a glass of excellent Lambrusco.

My wife and I went with 2 other couples, and this was an amazing experience. We are all really into food and enjoy making our own pizzas and pasta as well as other Italian-inspired dishes, but we still learned a lot from this tour. We found the cheese-and vinegar-making fascinating, and the tastings gave us all a new appreciation for the time and process necessary for this level of quality. But the pasta making (and eating!) was the real star. Enrico is an excellent instructor, and Nonna's fritatta and ragu with our tagliatelle is exactly what we hoped to eat at such a traditional Italian-family meal. The wine was delicious, the village was remarkable, and the company was excellent. It was a fabulously authentic Italian experience. Aly is an amazing guide. She is a joy to be with, and she provided so much interesting insight. Her enthusiasm is infectious, and she made the whole tour fun and fascinating. As Americans, we struggle a bit with the Italian language, but Aly's English is perfetto. We thoroughly enjoyed this excursion, even moreso than many of the other sights and experiences in and around Bologna and Modena. We all highly recommend Aly and this excursion.
