Leave Modena 45 minutes in advance the starting time 3pm by car or taxi. taxi from Bologna to our location (Acetaia Cavedoni) is around 70euros- from Modena to Acetaia Cavedoni is 45euros. we can reserve a taxi to get back to Modena or Bologna. The closer train station is Vignola 7km far from our location 15 minutes by taxi(20euros) but you have to reserve a taxi in advance because there are not taxi there. Taste and tour of one of the oldest traditional balsamic vinegar of Modena DOP and balsamic vinegar of Modena IGP producer. The tour starts with a tour of the vineyards around the company and you will see all the productions from the grapes to the final products. You will then taste 8 different balsamic vinegar from 5years to 100 years old. Welcome to the world of top quality balsamic vinegar. tasting of Parmigiano Reggiano, Prosciutto, Mortadella, Salame with a typical bread of this area. 1 Bottle of Lambrusco wine to be drink during the tasting.

Simply and incredible experience. Learning if the history, process and limitations of what DOP Balsamico is blew my mind. I love to cook, and have enjoyed many aged vinegars, but I had no idea of the complexity and passion that goes into DOP Balsamico. A great experience and Elisa was excellent guiding us through the history.
While it is a drive to get there (we took a train from Firenze to Modena and then a taxi, it was well worth the trip. Very interesting tour and yummy food and balsamic vinegar tasting! We learned a lot!
What a lovely family business to visit. The lady who gave us the information about the balsamic and their other products was amazing. Very informative, knowledgeable and generous with her time. She introduced us to other members of the family who were equally as nice. It was a lovely visit we were just sorry we did not have more time.
Immerse yourself in a session of learning about balsamic vinegar production, different certifications for authenticity, and then extend your tour to include the balsamic vinegar & food pairing to finish. Our friend’s father was close with the family which was how we decided that Modena was a must stop on our trip to Italy. For over 100 years, six generations have run this balsamic vinegar production. Even if you’re not a huge fan of balsamic vinegar, this family owned company will completely change your mind! Marcello, the owner and 6th generation, is incredibly accommodating and kind. Elisa ran our tour and she is so knowledgeable about the entire process and production! I cannot recommend this tour enough — absolutely opt to add on the food pairing after the tour and enjoy tasting history.
Easily one of the best things we did during our time in Italy. Elisa was a highly knowledgeable and engaging guide, and Marcelo made time to talk with us as well. The combination of culinary and family passion they put into their product and into your experience was terrific. The food tasting at the end really helped bring everything together, leaving us with a lot of new ideas on how to enjoy balsamico as an enhancement to a variety of dishes. I cannot recommend this particular tour highly enough.
The guide and the owners were very welcoming, and explained so much about the process that I feel like an expert on balsamic vinegar now! I highly recommend this tour if you are a cook, or just like to eat good food.
Passionate father and son team provided one of the best tours we've ever had. They spent time explaining the entire process of balsamic vinegar production, how to distinguish authentic DOP products, and shared their family tradition of a "batteria" of vinegar for each new family member. Their tasting presentation exceeded expectations-- delicious bread, mortadella, prosciutto, Parmigiano-Reggiano cheese all paired with their different balsamic products. This was memorable and very, very special.
This was the highlight of my Italy trip! So glad I picked this tour. Elisa was super friendly, informative and passionate about balsamic vinegar. Didn’t expect to meet two generations of the owners but they came to greet us too, really made us feel like vinegar making is so much more than just a family business for them. They truly love balsamic vinegars and want to share everything they know about vinegar making and tasting with their visitors. This was part of my birthday gift for my partner and we both had a wonderful time.

Very personal introduction to balsamic vinegar process. Owner family involved in tour and gave us great history. Can’t wait to return next year when on-site B&B is completed. Also strongly recommend stopping for lunch at il Cappero alle Mura in Castelvetro.
