Just authentic technique from Valencian chefs who grew up making it. Your experience starts at Ruzafa Market, a neighborhood gem where locals shop for fresh ingredients—far from the crowds of Central Market. Then, join our small-group workshop to master the secrets: selecting the best seasonal vegetables and meat or seafood - achieving the perfect socarrat (the prized crispy rice crust), using Albufera rice from Valencia's own fields, and balancing saffron like a pro. While your paella simmers, enjoy a sangria-making workshop and sample traditional tapas. Then sit down to feast on your creation with local wine, salad, mistela, and homemade dessert.

This class was a great experience, the instructors were friendly and very informative. The tapas were delicious and plenty of alcohol for all. The paella cooking was good fun and all class members were involved. I would highly recommend this class for anyone wishing to learn to cook paella in a fun way.
