After years of traveling the world and working in fine dining kitchens, I returned home to honor what shaped me from the beginning: the cooking I learned from my grandmother, and the authentic spirit of ranch kitchens. That’s why I created The Real Oaxaca Cooking Experience. At Quinta Brava, you’ll join a small team of professional cocineras and chefs who guide you step by step, with warmth and expertise. This isn’t just a class—it’s a way to preserve and share the rich heritage of ancient Oaxacan cuisine. You’ll learn traditional techniques, work with authentic tools, and cook your way through recipes from across Oaxaca. Everything happens on a traditional wood stove called the “Lorena,” made from mud and sand. And the best part? You’re the main chef—you cook by hand, guided by our experts from the first step to the final plate. Come for the flavors, stay for the culture, and leave with real recipes and a deeper appreciation for the craft.

Very educational. The class starts with a ride in a comfortable van to a destination about 20 minutes from the Center. It was a wonderful learning experience. The only thing I didn't like was going to the market. It was a long walk but the host gives the group the choice of what they want to cook which is why we had to go to the market. He has a wonderful authentic Oaxacan kitchen. He is a wonderful host and a good teacher. I used to be a chef so I prefer to observe , but my group loved it. Plan to spend the whole day . Like 9am to 3 pm. Great food ! We learned how to make tortillas from scratch. and we got to eat everything we made. Great fun and our host has a mini farm and a wonderful herb and vegetable garden. The class is outside and we eat at a picnic table with a covered roof. And at the end of class we sit down together and enjoy the meal we created together. Highly recommend

Since guests choose the dishes they would like to prepare, visiting the market allows everyone to select fresh, local ingredients and makes the experience more interactive and authentic. It was amazing. Jose explained everything for us and answered all of questions, . Everything was easy to learn and bring those recipes bring home to make for my family. Miguel Angel was great he also stepped in to help giving us some cooking tips . Thank you for having me in your home, the farm with all the fresh fruit and veggies was great. This was one of the highlights of our trip. Miguel was amazing. His home and gardens are amazing. It is completely hands on and a trip to the local market and into his farm. Don’t look any further. Book this.
From the moment we walked in, the atmosphere was incredibly welcoming and instantly brought all the participants together. The host was fantastic—so friendly, engaging, and passionate—and the supporting staff went out of their way to be helpful and kind. What I loved most was that we didn't just blindly follow a recipe. We actually learned the why behind the cooking, including how to make small adjustments to customize the dish to our own tastes or completely transform it into something new. It felt like a true community experience. I highly recommend this class to anyone!

Awesome time and experience.
My husband and I had such a good time with our son and his wife. The host was wonderful at explaining the various moles and traditional cooking methods. Each participant was involved in different aspects of the dishes we cooked and the food was tasty. The other couples were also fun to learn and chat with.
Had a very nice experience and enjoyed everything moment. We are still missing the recipes thought, would appreciate if they would still send them. If this is done, 5/5 rating!

My Sister and I had the pleasure of an incredible farm-to-table Oaxacan cooking experience with José as our instructor today. We were picked up in Oaxaca Central in a van and driven out to a smaller more laid back area outside of town where there was an outdoor cooking experience with José showing us the old traditional methods of making foods such as corn tortillas made from scratch, moles, salsas, empanadas and more.. We were given a tour of their large fruit and vegetable garden and their goats, chickens and such. Then we walked to the local market to shop for additional fresh ingredients. We arrived back and José put us to work, showing us the authentic cooking techniques over fire, using all the freshest ingredients. We enjoyed several dishes and it was a wonderful experience in a laid back large back yard setting. They have a great set up there for a truly memorable day. Oh, and we enjoyed the cocktails too!!
A wonderful experience! Learn how to make tortillas from corn masa. They showed us nine different Molay's and we got to pick two that we made from scratch.. Delicious.!
