The mole cooking class was one of the greatest experiences that I’ve had in 6 months of travel around Latin America. As someone who enjoys cooking, getting to be a part of the whole process of making the dish, from going to the market, prepping all of the ingredients, cooking, and finally eat the meal was exactly what I was hoping for. Wendy is a fantastic teacher and a great person to chat with about Oaxaca and cooking. I absolutely recommend this class.
We had so much fun! The experience starts with a visit to a nearby market to pick out ingredients emphasizing how the chef centers the local community in the class. Besides learning to cook mole and a few salsas, we also learned some Oaxacan history through the process.
I learned so much about the Zapotec culture and the history and evolution of molé. Our guides were fantastic! The chef allowed us to fully participate in the preparation and execution of the meal. It was beyond deliciosa!! And so fun!!
We loved the experience! The food was so good and sourced from a local mercado. The chef spoke both english and spanish, and asked us which we preferred. When we chose Spanish, she was very good about checking for understanding and explaining things multiple ways when needed. We enjoyed a delicious feast together at the end! It was about 4 hrs. The first 30-60 minutes was shopping, another 90 minutes or so of prep and cooking with plenty of tasting along the way, and then the feast!
Victor and his team were fun and informative! We prepared the meal together, so success was guaranteed. Tasty!
I took part into the Mole cooking class, which was something more than just a cooking class! We learnt about tradition, food, culture and we had a really good time. The group was small, just four of us. We went to the local market, the chef told us everything about the different local fruits and vegetable and then we cooked a salsa, yellow mole, and we made tortillas and quesadilla ourselves! After the cooking we enjoyed eating together. It was a really nice experience, the chef explained us all everything and was both friendly and helpful! I strongly recommended it.
Victor was an absolutely brilliant host and teacher! The class was great, with lots of things to try and learn, and a delicious meal at the end. Thank you so much to Victor and the team!
This tour is the full deal - wonderful tour through the market with samples of local fruits, veggies and chocolate. Then, our amazing chef Victor and helper Wendy, put us to work and make every element of the meal. We appreciated the guidance and liberty to learn how to make this authentic Oaxacan meal, straight from his grandmother’s repertoire. Highly recommend.
Chef Victor is so passionate about reviving indigenous culinary knowledge. It makes this experience stand out from a typical cooking class.
Wonderful experience! I will definitely recommend this to others. We shopped in the local market, learned the history of mole, and cooked an authentic meal. It was located in a beautiful location so the walk there was a treat. 5 stars!
