Saknar Tsuivan mer än något annat när jag är hemifrån. Så jag byggde en eftermiddag runt det. Ni möter mig på Chinggis Square och vi promenerar, inte mot monument, utan genom gatorna jag faktiskt växte upp på. Marknader, skolgårdar och järnvägsstationen där jag sålde läsk som barn under sommarlovet. Ulaanbaatar som den levs, inte som den är fotograferad. Sen åker vi hem. Mitt hem, på tionde våningen, med staden utspridd nedanför oss. Te först, sedan en omgång Shagai, som mongoliska familjer har spelat det i generationer. Sedan in i köket: du rullar degen, skär nudlarna och lagar Tsuivan som den alltid har gjorts i mongoliska hem. När vi sätter oss ner är måltiden på bordet din. Du klarade det. Liten grupp, aldrig fler än fyra gäster. Inget manus, ingen brådska. Bara Ulaanbaatar för en eftermiddag, upplevs som gäst i ett riktigt mongoliskt hem.

MÖT MIG PÅ CHINGGIS SQUARE Jag väntar vid Sukhbaatar-statyn med en Serey Travel-skylt. Vi träffas och börjar vår vandring. Du kommer att rulla degen, skära nudlarna och laga mat tillsammans med mig, som Tsuivan görs i mongoliska hem över hela landet. ÄT VAD DU LAGAT När vi sätter oss ner är måltiden på bordet helt och hållet din. Vi delar det tillsammans. TILLBAKA NÄR DU ÄR REDO Du kommer att lämna med en full mage, ett recept att ta med hem, och ett perspektiv på Ulaanbaatar de flesta besökare aldrig hittar.

My walk and cooking experience with Ider was perhaps my favorite thing I did in Mongolia! His tour of Ulaanbaatar is a beautiful, personal look at urban life in this country, and I enjoyed the opportunity to listen to his memories and perspective around the city. The second half of this experience, cooking a homemade meal, is wonderful. If you're someone who truly enjoys cooking for the love of ingredients, connections, and community, you'll love cooking Tsuivan with Ider. As a solo female traveller, I felt so comfortable conversing with Ider, and it quickly felt like hanging out with an old college friend. Learning about Mongolian culture through a game and about the local cuisine by cooking from scratch is the perfect way to add depth to your visit to this beautiful country.
