Följ dina smaklökar till hjärtat av Italiens mest kända foodie region på denna Emilia-Romagna dagstur från Florens. Den här turen ger dig chansen att själv upptäcka hur produkter kända över hela världen för sin smak och höga kvalitet tillverkas. Denna region är känd för Parmigiano Reggiano, Balsamvinäger, Lambruscovin och Prosciutto. Troligen känner du redan till dessa produkter, men visste du att de ursprungliga tillverkas uteslutande i Emilia-Romagna? Hela dagen kommer du att njuta av fyra olika provningar: Parmesanost, Prosciuttoskinka, Lambrusco och Balsamvinägerprovning.

Hämtar dig från ditt boende i Florens kl. 07.00. Vår chaufför kommer normalt att vara på din adress kl. 6.45. Vi kör sedan till caseificio, det tar cirka 1 timme och 45 minuter.
På denna caseificio (ostfabrik) kommer du att introduceras till parmesanostens universum och lära känna dess hemligheter. Bakom varje rulle Parmigiano Reggiano ligger mer än vad man kan se, på grund av det intrikata traditionella receptet bakom och de kontrollerade förhållandena under hela processen. Du kommer att se ostmakare på jobbet och bevittna hela processen. Rundturen i fabriken kommer så småningom att leda till åldringsrummet ('stagionatura' på italienska), där du kommer att beundra rader och kolumner av osthjul som parfymerar luften. Fabriken tillverkar fler sorters ost, allt ekologiskt. Caseificio-turen avslutas med en provsmakning av olika typer av parmesanost och ricotta tillsammans med lokala produkter.
Idag är Acetaia Sereni ledande inom produktionen av traditionell balsamvinäger från Modena och ett stort utbud av sötsyrliga smaktillsatser. Här äter du en traditionell lunch på fastighetens restaurang som har utsikt över ett hisnande landskap. Lunchen är centrerad kring rätter som är typiska för regionen Emilia-Romagna och som bäst passar ihop med olika typer av balsamvinäger. Efteråt får du en privat rundtur i källarna, där du får en fullständig förklaring av balsamvinägerns tillverkningsprocess: från pressningen av druvorna och kokningen av vörten, till filtrerings- och blandningsstegen. Besöket avslutas med en balsamvinägerprovning.
Prosciuttificio Leonardi föddes 1988 från en stor erfarenhet inom slakt- och bearbetningssektorn för griskött. 1988 är också året då företaget går med i Modenas ”D.O.P.” Prosciutto Consortium, som gör alla sina produkter märkta enligt EU:s produktkvalitetssystem PDO (Protected Designation of Origin). Denna fabrik är stolt över att upprätthålla höga biologiska produktionsstandarder och producera utsökt torrtorkad skinka. Det är en pålitlig leverantör till Gucci restaurang i Florens och Massimo Botturas toppklassrestauranger. Du kommer att besöka fabriken, besöka produktionsrummen och förstå hur skinkbearbetning fungerar, från mottagandet av köttet till slutprodukten. Ditt besök avslutas med provsmakning av ett brett utbud av deras produkter: skinka både rå och tillagad, såsom culatta, lardo, salami, prosciutto cotto, prosciutto al tartufo. Pålägget kommer att åtföljas av halvmåne, även känd som tigelle, som är ett typiskt bröd för området.
Fattoria Moretto drivs för närvarande av Fausto och Fabio, den tredje generationen av Altariva-familjen. Vingårdens ursprung går tillbaka till början av 1960-talet då deras farfar Antonio Altariva flyttade familjen från Pavullo nel Frignano till Castelvetro för att starta en vinodlingssatsning under ett andelsodlingskontrakt. År 1995 beslutade Fausto att ställa om vingårdsodlingen till "integrerad produktion", vilket markerade det första steget mot ekologisk odling. Idag är Fattoria Morettos produktion inriktad på att uttrycka Lambrusco Grasparossas unika egenskaper, med tonvikt på kvalitet framför kvantitet. I hjärtat av Lambrusco Grasparossas territorium, cirka 200 meter över havet, odlade Fausto och Fabio Altariva sina marker. Gården, som helt drivs med ekologiska metoder, är utbyggd till icke-angränsande skiften på kullarna i Castelvetro. Området har god ventilation som dämpar sommarvärmen och skyddar växter från sjukdomar.

A once-in-a-lifetime experience! My mom and I had an amazing time exploring where so many of our favorite foods and wines are made. Every stop featured local, family-owned businesses, which made the tour feel authentic and special. It truly was an incredible day—we learned so much, enjoyed delicious tastings, and had meaningful, personable conversations with our wonderful guides, Elizabeth and Angel. Highly recommend this tour to anyone looking for a memorable and enriching experience!

From start to finish, angel was an absolute delight! He guided us and explained everything at every factory we explored. We didn’t have coffee before leaving for our tour, and he ended up stopping at a cafe for espresso for us. If you’re in Florence, do not skip out on this trip! THIS is the tour you want AND have to do!!! At first we were hesitant on choosing this tour given the cost. Then, after a well traveled friend reviewed the itinerary and said that it sounded great, we committed and hoped for the best. We were not disappointed. Angel was ready to pick us up right on schedule right from our hotel. Shortly after from pulling away from the hotel, Angel cordially introduced himself and we had a great introduction conversation. He then commenced to review the day's itinerary. There was a modification due to a vendor's request and he said that it would just switch a couple stops and not change the day's activities or timing. We appreciated the honesty and explanation. From the first stop to the last, we were amazed at the knowledge Angel had about the locations and products from all our stops. Even more appreciated was his smooth delivery and willingness to answer questions. It was no surprise that he had a great relationship with the staff of every establishment. As said above, this tour is not to be passed by. You will not regret it. Just sit back, relax and get immersed in this fabulous experience.

What a great food experience! Our driver, Stefano was fantastic, very knowledgeable and friendly. What an experience the day was- learning about parmigiana cheese, prosciutto, and balsamic vinegar and of course a wine tasting along the way. This was such an amazing experience! Our guide Elizabeth was awesome and made us feel comfortable right away. It was also a lovely detour to see the countryside after days of city jetsetting. We felt like VIPs all day! Come with empty stomachs and lots of energy as it will be a full day of amazing food, wine, and views to rival all of Florence.

My parents, husband and I on our recent trip to Italy did the Exclusive Emilia-Romagna, Parmigiano-Reggiano, Prosciutto, Balsamic Vinegar Tour with Angel and had the most amazing time! Our guide Angel was top drawer in every way. He served as driver and the actual guide on a couple of stops. We learned alot about Parmesan, balsamic and parma hams. The tastings were delicious and brought each visit together. Never boring. Great tour for foodies.

What an incredible experience! We were looking forward to this tour for months, but we had no idea how amazing it would be. Our guide, Johnny, picked us up right on time from our hotel and was a fantastic well of knowledge, answering the many questions we had from our time in Italy. Incredibly knowledgeable and a great conversationalist, he made the long (and scenic!) car ride fly by. Each stop was so delicious, from the cheeses to the vinegars to the full meal of pasta and meats.
