Artisanal Mezcal Culture Tour för provsmakning och historia

I samarbete med Mezcal Dainzu bjuder vi in dig att utforska historien och landskapet i Santiago Matatlán, huvudstaden i Mezcal. På denna utflykt får traditionerna liv genom familjen Santiago Hernández, som i generationer har bevarat hantverket med agavedestillation – sedan mitten av 1800-talet – då mezcal var undervärderat och nästan förbjudet. Doña Octavia och Don Leoncio – femte och fjärde generationens mezcalmästare – välkomnar oss tillsammans med sin son Carlos till sina agavefält, med fantastisk utsikt, för att skåla med naturen och visa oss den hantverksmässiga produktionsprocessen i deras rustika destilleri. Under provningen kommer du att upptäcka det breda utbudet av smaker som vilda agaves har att erbjuda. Vi kommer också att dela med oss av några mezcales som förberetts speciellt för samhällsfirande. Resan avslutas med en måltid av mullvadar och lokala rätter, tillagade av Doña Reina, en känd lokal kock, på hennes mysiga restaurang som ligger i stadens historiska centrum.

Går genom olika områden i Santiago Matatlán; en stad som kallas "Mezcals världshuvudstad", kommer du att börja upptäcka hur destillationsprocesserna utvecklas inne i fabriken, hur agaverna växer på fältet och lära dig hur man kan skilja en typ av mezcal från en annan. Den dagen du kommer att utveckla en djupgående kunskap om mezcal kommer du att få flera metoder för det. Vi kommer att gå på agavefältet, för att vara i perfekt miljö för några förspanska myter, och slutligen fortsätta med att göra en Mezcal-toast med naturen. Vi åker till palenque där du kommer att uppleva mezcalprovningen, där du kommer att kunna testa din nyutvecklade kunskap. Efteråt går vi till terrassen på fabriken där du kommer att serveras en traditionell Oaxacan-måltid tillagad på comal, och du kan njuta av den vackra utsikten över dalen och agavefälten. Bilresan mellan staden och byn tar 40 minuter varje väg.

Excellent experience! I booked it when I took two friends visiting me from China and England to Oaxaca, and they both left delightedly. I loved the way Vero and Don Leoncio (the master rocker) introduce you to the world of mezcal, as they not only show you the process of making the drink, but also explain the cultural importance of it. Vero is a very happy and friendly guide: from the beginning she makes you feel like she is your old friend, which makes the experience very enjoyable and fun. At the same time, it is evident the dedication and preparation he has put into creating this tour, as it is a very complete experience and was able to answer all the doubts that my friends and I had. We also loved the treatment of Don Leoncio, who welcomes you with a big smile and makes you feel very welcome in the palenque. Part of what fascinated us about this experience was precisely to see the production of mezcal from the perspective of a family business that keeps alive the region’s mezcal tradition. After the tour of the fields and the palenque de mezcal, Vero took us to eat at a restaurant in the town of Matatlan, where they make a pink mole that, without a doubt, was the best meal we made during our trip to Oaxaca (one of my friends even said it was the best meal of his entire stay in Mexico). If you want an authentic experience, away from mass tourism and that really gets you into the world of mezcal, then you have to book this one!
We highly recommend this special tour! Verónica was a spectacular and knowledgeable guide and also a delightful person to spend the afternoon with. We were particularly impressed by the obviously authentic relationship she has built and nurtured with the family/owners of the farm and factory we visited. We could not believe we got to taste mezcal in the field with the Don himself!! From the history, to cutting agave in the field with the Don, to the factory tour and tasting, to the delicious meal in a local restaurant following the tour, it was an excellent experience. We recommend this tour to anyone looking for an authentic and unique mezcal experience!
This was an absolutely fun and amazing adventure. Vero organized everything from beginning to end. We drove out to a family-run mezcaleria, walked through the fields of agave, tried our hand at cutting leaves off with a machete (not as easy as it may look) and learned about the process of distilling mezcal. Just being out in the field was an adventure - we're used to agaves in small clay pots, not to these towering giants. It was a truly fun and educational experience and it was also important for us to see a small producer who uses traditional methods and respects nature. At the end, Vero took us for lunch - we sat above agave fields and truly enjoyed the food. In fact... we cancelled our dinner reservation in Oaxaca.
