Uw Gids laat u kennismaken met hun gesloten kringloopsysteem, beginnend bij biologisch voer op het land tot de hoogwaardige melk die wordt gebruikt voor authentieke Parmezaanse kaas. Je bent getuige van het hele kaasmaakproces, van het stremmen en vormen tot het vormen van de iconische wielen. Verken vervolgens het rijpende pakhuis, waar meer dan 6.000 kaaswielen maandenlang worden opgeslagen, waardoor complexe smaken worden ontwikkeld. Leer hoe veroudering van 12 tot meer dan 36 maanden de textuur en smaak verbetert. The morning tour was great! We got to see them taking the cheese curd from the vats and putting it in the rounds. The process was fascinating and the fact that every part of the milk is used for a purpose. There was no waste and the product you got to taste at the end was spectacular. The quality control is quite impressive.

We arrived in time to see the cheese being made. You have to schedule the tour early, around 8 to 8:30 to see the cheese being made. They only make 10 wheels per day so when they are finished, that is it for the day. The history and the process of Parmesan cheese is explained and seeing the storage is impressive. Recommended.

This is an intimate visit with a family owned parmigiana reggiano factory that truly respects the tradition and the process. They are a "closed loop" production, producing the hay that feeds the cows, raising and milking the cows, and making the cheese. The tour walks you through the small facility that makes the cheese and shows you the different stages of production. The end is a tasting of cheese of different ages paired with a lovely sparkling red from Modena. Tess is very knowledgeable about the family factory, parmigiana reggiano, and Modena food production. She was great with questions and truly enjoys interacting with visitors and talking about Modena food. It was the number one experience of our Italy trip!
