Ontdek de essentie van traditionele Japanse thuiskoken, ichiju-sansai, in Nagoya, waar lokale fermentatietradities gerechten verbeteren met miso, mout en sojasaus. Leer onder begeleiding van oma een Japanse soepbouillon maken met kelp- en bonitovlokken en deel haar expertise en culinaire wijsheid. De gerechten die we samen koken zijn de gekoesterde recepten van mijn familie – gezonde, evenwichtige maaltijden die generaties lang zijn doorgegeven en geliefd. U zult ook het genoegen hebben om verschillende soorten miso te proeven, een traditionele gefermenteerde smaakmaker die het hart vormt van Japanse thuiskoken. Na het bereiden en proeven van deze gerechten nemen de deelnemers deel aan een serene matchaceremonie, waarbij ze matcha maken en genieten van seizoensgebonden Japanse zoetigheden. Beperkt tot vier personen, belooft deze intieme ervaring een persoonlijke reis naar Nagoya's rijke culinaire erfgoed.

I thoroughly enjoyed my time with Grandma Junko during my cooking lesson. Everything was beautifully explained and well organised, and Grandma Junko is extremely knowledgeable and friendly. I enjoyed learning more about Japanese cultures around meals too. Thank you so much, I’m looking forward to recreating my miso chicken at home in England with my recipe card!

This was a fantastic experience! I travel to Japan once a year for business and I took a few hours to dive into learning a little about traditional Japanese cooking. I cook a lot but I picked up many new ideas and techniques! If you are in Nagoya area, it was very convenient. Highly Recommend!

I had the best time cooking with these two grandmas. They were extremely hospitable and kind. While doing the cooking class they were very open about the entire process and answered any and all questions I had. Plus the tea ceremony was amazing! To experience Nagoya is to meet the people who make this place special. Grandma Junko and Chikako brings the joy of cooking through techniques she has learned throughout her life. It brought me back to the days of watching my grandma cook. This is the one “gift” you can bring back home that will last forever. She made cooking seem so simple, yet flavorful and beautiful. We can’t believe we made an entire meal (chicken wings, temusu, tamago rolls, spinach, Kamaboko artichoke) in a couple of hours. It was like, “Dining with the Chef”. To top it off, Grandma Junko showed us the techniques in a tea ceremony. I would highly recommend this activity. It’s an experience you’ll remember always. Thank you Grandma Junko and Chikako.
