In collaborazione con Mezcal Dainzu, vi invitiamo a esplorare la storia e i paesaggi di Santiago Matatlán, la capitale di Mezcal. In questa escursione, le tradizioni prendono vita attraverso la famiglia Santiago Hernández, che per generazioni ha conservato il mestiere della distillazione dell’agave –a partire dalla metà del XIX secolo-, quando il mezcal era sottovalutato e quasi proibito. Doña Octavia e Don Leoncio, maestri mezcal di quinta e quarta generazione, insieme al figlio Carlos, ci accolgono nei loro campi di agave, con una vista mozzafiato, per brindare con la natura e mostrarci il processo di produzione artigianale nella loro distilleria rustica. Durante la degustazione, scoprirai la vasta gamma di sapori che le agavi selvatiche hanno da offrire. Condivideremo anche alcuni mezcales preparati appositamente per le celebrazioni comunitarie. Il viaggio si conclude con un pasto a base di talpe e piatti locali, preparati da Doña Reina, una rinomata cuoca locale, nel suo accogliente ristorante situato nel centro storico della città.

Itinerario
Passeggiando per diverse zone di Santiago Matatlán; una città chiamata "la capitale mondiale del Mezcal", inizierai a scoprire come si sviluppano i processi di distillazione all'interno della fabbrica, il modo in cui le agavi crescono sul campo e imparerai a distinguere un tipo di mezcal da un altro. Il giorno in cui svilupperai una conoscenza approfondita del mezcal, ti verranno forniti molteplici approcci ad esso. Cammineremo nel campo di agave, per essere l'ambientazione perfetta per alcuni miti preispanici e, infine, faremo un brindisi al Mezcal con la natura. Ci dirigeremo al palenque dove sperimenterai la degustazione del mezcal, dove potrai mettere alla prova le tue conoscenze appena sviluppate. Successivamente andremo sulla terrazza della fabbrica dove ti verrà servito un pasto tradizionale di Oaxaca cucinato sul comal e potrai goderti la splendida vista sulla valle e sui campi di agave. Il viaggio tra la città e il villaggio dura 40 minuti a tratta.

Excellent experience! I booked it when I took two friends visiting me from China and England to Oaxaca, and they both left delightedly. I loved the way Vero and Don Leoncio (the master rocker) introduce you to the world of mezcal, as they not only show you the process of making the drink, but also explain the cultural importance of it. Vero is a very happy and friendly guide: from the beginning she makes you feel like she is your old friend, which makes the experience very enjoyable and fun. At the same time, it is evident the dedication and preparation he has put into creating this tour, as it is a very complete experience and was able to answer all the doubts that my friends and I had. We also loved the treatment of Don Leoncio, who welcomes you with a big smile and makes you feel very welcome in the palenque. Part of what fascinated us about this experience was precisely to see the production of mezcal from the perspective of a family business that keeps alive the region’s mezcal tradition. After the tour of the fields and the palenque de mezcal, Vero took us to eat at a restaurant in the town of Matatlan, where they make a pink mole that, without a doubt, was the best meal we made during our trip to Oaxaca (one of my friends even said it was the best meal of his entire stay in Mexico). If you want an authentic experience, away from mass tourism and that really gets you into the world of mezcal, then you have to book this one!
We highly recommend this special tour! Verónica was a spectacular and knowledgeable guide and also a delightful person to spend the afternoon with. We were particularly impressed by the obviously authentic relationship she has built and nurtured with the family/owners of the farm and factory we visited. We could not believe we got to taste mezcal in the field with the Don himself!! From the history, to cutting agave in the field with the Don, to the factory tour and tasting, to the delicious meal in a local restaurant following the tour, it was an excellent experience. We recommend this tour to anyone looking for an authentic and unique mezcal experience!
This was an absolutely fun and amazing adventure. Vero organized everything from beginning to end. We drove out to a family-run mezcaleria, walked through the fields of agave, tried our hand at cutting leaves off with a machete (not as easy as it may look) and learned about the process of distilling mezcal. Just being out in the field was an adventure - we're used to agaves in small clay pots, not to these towering giants. It was a truly fun and educational experience and it was also important for us to see a small producer who uses traditional methods and respects nature. At the end, Vero took us for lunch - we sat above agave fields and truly enjoyed the food. In fact... we cancelled our dinner reservation in Oaxaca.
