1) Dopo essere venuti a prendervi all'Airbnb/Hotel con un trasporto comodo e privato, ci dirigeremo a sud di Medellín verso la bellissima campagna, a soli 20 minuti dalla città, vedremo una prospettiva diversa, assorbendo la vita vibrante e vivida intorno a Medellín. 2) Presto arriveremo in una splendida piccola fattoria familiare di caffè, immersa nella bellezza naturale, ricca di una varietà di colture, dove vivremo un'autentica esperienza del caffè che ti condurrà attraverso l'intero processo di preparazione del caffè, da la pianta del caffè alla tazzina. Circondato dagli splendidi paesaggi di Antioquia, acquisirai una comprensione più profonda dell'arte e della scienza della preparazione del caffè. Dalla raccolta delle ciliegie alla tostatura dei chicchi, imparerai la complessità, il duro lavoro e la dedizione necessari per produrre una semplice tazza di caffè.
3) Imparerai tutto sul meraviglioso mondo del caffè! In Colombia il caffè non è solo una bevanda, è un patrimonio culturale e motivo di orgoglio. Ti guideremo attraverso l'affascinante viaggio del caffè, dal momento in cui viene raccolto fino al punto in cui raggiunge la tua tazza. Ma proveremo anche diversi metodi di preparazione per scoprire i diversi sapori e le note create nel caffè, utilizzando la stessa quantità di acqua e la stessa quantità di chicchi di caffè, semplicemente cambiando il metodo. Sorprendente!! Questo è il processo che vedremo: RACCOLTA: Il viaggio inizia quando i raccoglitori di caffè selezionano attentamente solo le ciliegie di caffè più mature. Queste ciliegie hanno un colore rosso intenso e intenso, indicando che sono pronte per essere raccolte. DEPOLPAZIONE: Una volta raccolte le ciliegie, devono essere lavorate per estrarre i chicchi di caffè. È qui che entra in gioco la fase di depolpazione. Le ciliegie vengono inserite in una macchina che rimuove la buccia esterna e la polpa, rivelando i preziosi chicchi di caffè all'interno. Prossimo...
FERMENTAZIONE: Dopo che le ciliegie del caffè sono state private della polpa, subiscono un processo chiamato fermentazione. Questo passaggio è fondamentale per esaltare i sapori dei chicchi di caffè. I chicchi spolpati, ancora ricoperti da parte della polpa del frutto, vengono posti in vasche di fermentazione o botti. Gli enzimi naturalmente presenti nella polpa del frutto compiono la loro magia, abbattendo qualsiasi mucillagine residua e aggiungendo complessità al profilo aromatico del caffè. È come marinare i fagioli in una salsa speciale, permettendo loro di sviluppare le loro caratteristiche gustative uniche. LAVAGGIO: Dopo aver fermentato per il tempo prescelto, i chicchi di caffè presentano ancora dei residui appiccicosi, chiamati mucillagini. Per eliminare questo, i fagioli vengono lavati accuratamente con acqua. Questo aiuta a pulirli e prepararli per i passaggi successivi. È come fare una doccia rinfrescante ai fagioli per assicurarsi che siano perfettamente puliti.
ESSICCAZIONE: Ora è il momento che i chicchi di caffè si asciughino. Sono sparsi in strati sottili su ampi patii o aiuole rialzate per assorbire il caldo sole. Man mano che si asciugano, i fagioli perdono gradualmente il loro contenuto di umidità e sviluppano i loro sapori unici. TREBBIATURA: Una volta che i chicchi sono asciutti, sono pronti per il processo di trebbiatura. Ciò comporta la rimozione dello strato esterno di pergamena che protegge i fagioli. Vengono utilizzate macchine o metodi tradizionali per separare i chicchi dalla pergamena. TORREFAZIONE: Ah, il passaggio finale e più emozionante! I chicchi di caffè verde vengono accuratamente tostati alla perfezione. È qui che avviene la magia, poiché i chicchi subiscono una trasformazione e sprigionano i loro incredibili aromi e sapori. La tostatura è un'arte che richiede un controllo preciso della temperatura e competenza. I chicchi passano dal verde al marrone e i loro sapori si sviluppano a seconda del livello di tostatura. È come tostare un marshmallow su un falò, assistere al suo cambiamento di colore e assaporare il delizioso risultato.

One of the best tours we've done. Juan Carlos picked us up right on time, his English was excellent, and he gave us a great overview of the history and culture behind the coffee. We especially loved meeting Don Antonio, the original farmer, and hearing about his life and methods directly from him. We also picked beans ourselves, tried roasting and grinding, and sampled several different coffee preparation styles. Everyone made us feel very welcome.
We were greeted with a warm welcome from our tour guide Carlos who picked us up from our accommodation. Throughout the drive to the coffee plantation he gave us a running commentary of the area and the history and pointed out significant landmarks along the way. A great start to our private tour outside Medellín and easy to understand as his English is excellent. The area where the plantation was, was very narrow and steep and felt very safe with Carlos driving. The tour was a real education for both of us as we learn a lot about the processing of coffee from planting, picking and all the different processes it goes through to reach its flavour and of course all the tastings, were amazing - so knowledgeable and informative. The snack at the end with the coffee was delicious and for me gluten free. A great way to finish an amazing experience. We were also able to buy some organic coffee there which has true meaning after picking the coffee amongst the plantation!
Our family of six had a spectacular time visiting this farm with Carlos as our guide. In addition to being a walking encyclopedia on the topic of coffee, he knows Medellin and was able to help us better understand the city as he drove us to and from the farm. The experience of better understanding coffee - from seed to processing to tasting - exceeded all of our expectations. Every step of this tour was given with exquisite thoughtfulness and care. I think part of that comes from doing it again and again and having had the chance to perfect it, but for us we felt like the first and favorite customers ever - not a hint of being part of a touristy grind. Carlos and Juan Pablo, who assisted Carlos once we got the farm, seemed truly enthusiastic to share their passion for Colombian coffee with us. Also, this farm is in a breathtakingly beautiful location. I don't think any of us will ever look at or taste coffee the same way again. Be sure to bring plenty of cash so you can buy their products (which they never pushed, we inquired and bought) as well as to tip. We left this tour high on coffee and life. Truly a highpoint of our trip. Thank you Carlos, Juan Pablo, and all at the farm!

This was such a special experience! After multiple coffee-oriented tours across the globe, this was the most in-depth and interactive we've been on by far. From the planting, to the harvesting, to the drying, to the roasting, to the packaging and all the little details in between - we left with a wealth of knowledge no other tour had ever provided us. It was so cool to actually participate in so many of these steps hands-on, and the coffee tasting of the different brewing methods was fascinating! Our guide Carlos was amazing and such an amazing addition to our day on the farm. Would highly recommend this tour to anyone visiting Medellin!
This coffee tour was THE BEST! Partly due to our great tour guide Juan Carlos and partly due to the farm owner. I cannot express what great experience this was. Because we had time after and Juan Carlos was flexible, we added a tour of the community 13. I wouldn't do this on my own as it is very crowded and too much and having a guide made it digestible. We also went on the cable car... again having a guide to point out the interesting details was the way to go. The mass transit system was very clean and very safe. This might have been the best tour in Medellín.
My brother and I went on the half day tour with our guide Carlos. It was a great experience in which we learned different brewing methods, the hisory of coffee and the production of the coffee bean process. The scenery was beautifull and the farm was run by a very friendly and warm family. Carlos was a great guide who accompanied us during the entire process and made it an unforgetable experience.
