Questo non è un tour. È una mezza giornata a Ulaanbaatar, che termina intorno a un tavolo di famiglia con Tsuivan – il piatto che mi manca di più ogni volta che lascio la Mongolia. Iniziamo da piazza Chinggis e camminiamo nei quartieri residenziali dove la vita quotidiana si svolge al di là dei percorsi turistici. In una città nota per il traffico, rallentiamo, passando per mercati, scuole e routine mattutine che la maggior parte dei visitatori non vede mai. Dopo la passeggiata, arriviamo a una casa mongola in un appartamento locale con vista sulla città. Beviamo tisane, giochiamo a Shagai (un tradizionale gioco di ossa della caviglia), poi cuciniamo Tsuivan da zero, arrotolando l’impasto, tagliando i noodles e cucinando fianco a fianco, come viene fatto nelle case di tutta la Mongolia. Quando ci sediamo a mangiare, ce l’hai fatta interamente con le tue mani. Parti con una ricetta, lo stomaco pieno e una prospettiva su Ulaanbaatar che la maggior parte dei visitatori non trova mai - non come turista, ma come ospite in una casa locale.

INCONTRIAMOCI A CHINGGIS SQUARE Vi aspetto alla statua di Sukhbaatar con in mano un cartello Serey Travel. Ci incontreremo e inizieremo la nostra passeggiata. PASSEGGIA PER LA CITTÀ IN CUI SONO CRESCIUTO Circa 7 km attraverso quartieri che la maggior parte dei visitatori non vede mai, passando per i mercati locali, i cortili delle scuole, un parco che conosco fin dall’infanzia e il quartiere ferroviario dove vendevo bibite da bambino. Ogni strada ha una storia. VIENI DENTRO CASA MIA Arriviamo al mio appartamento al decimo piano con vista sulla città. Rallentiamo con una tisana e giochiamo a Shagai, un tradizionale gioco mongolo di caviglie. CUCINA LO TSUIVAN CON LE TUE MANI In cucina. Stenderai l’impasto, taglierai i noodles e cucinerai al mio fianco, come lo Tsuivan è fatto nelle case mongole di tutto il paese. MANGIA QUELLO CHE HAI FATTO Quando ci siederemo, il pasto sul tavolo sarà tutto tuo. Lo condividiamo insieme. TORNA INDIETRO OGNI VOLTA CHE SEI PRONTO Partirai con la pancia piena, una ricetta da portare a casa e una prospettiva su Ulaanbaatar che la maggior parte dei visitatori non trova mai.

My walk and cooking experience with Ider was perhaps my favorite thing I did in Mongolia! His tour of Ulaanbaatar is a beautiful, personal look at urban life in this country, and I enjoyed the opportunity to listen to his memories and perspective around the city. The second half of this experience, cooking a homemade meal, is wonderful. If you're someone who truly enjoys cooking for the love of ingredients, connections, and community, you'll love cooking Tsuivan with Ider. As a solo female traveller, I felt so comfortable conversing with Ider, and it quickly felt like hanging out with an old college friend. Learning about Mongolian culture through a game and about the local cuisine by cooking from scratch is the perfect way to add depth to your visit to this beautiful country.
