Le Takayama Jin'ya est un jin'ya de l'époque d'Edo qui a servi de siège du gouvernement de la province de Hida sous le shogunat Tokugawa du Japon de 1692 à 1871.
Une tradition essentielle de Takayama s'appelle Asa-ichi. Derrière ce nom se cache le petit marché du matin où l'on trouve produits frais et artisanat local.
Le marché du matin de Miyagawa existe sous une forme ou une autre depuis plus de deux siècles, et c'est toujours une plaque tournante pour les produits frais. Le marché est situé sur chaque rive de la rivière Miya entre deux ponts, Kajibashi et Yayoibashi. Chaque matin, si le temps le permet, vous pouvez tout acheter, des fruits et légumes locaux aux poupées et aux baguettes élégantes. Comme pour tous les marchés, plus vous y arrivez tôt, mieux c'est. Les produits les plus juteux et les plus frais seront sélectionnés en premier, et le marché est un endroit parfait pour observer les gens.
Le cœur de Takayama est Sanmachi, la vieille ville aux bâtiments préservés et restaurés. À l'époque d'Edo (1603-1867), Takayama était une ville centrale animée regorgeant d'artisans, de marchands et d'agriculteurs des environs. Aujourd'hui, cet héritage est préservé dans les trois rues principales et les quartiers environnants de Sanmachi.
OHNOYA, brasserie et boutique de sources traditionnelles de miso et de soja a été fondée il y a 250 ans dans la ville de Takayama (HIDA).
La marque signature Sansha est un saké sec avec un umami musclé. Vous pouvez acheter une petite tasse de dégustation et savourer plus de dix types de saké. Yuriko (Lily) was very knowledgeable and friendly tour guide. She was flexible and was able to push your tour back as we had travel delays. Tour hit interesting historical and culture sites and was less of a food tour compared to others we’ve done. Tasted one sample miso soup, Sake tasting and she ended the tour by leaving us at amazing steak restaurant.
