We booked this experience as a large group of friends who got together for a 40th birthday and had a brilliant time. The group was a mix of whiskey connoisseurs and those of us who would have previously described whiskey as "burning and unpleasant" however we all loved this experience. We learned so much about whiskey (the process, history, business, etc) and laughed so much; Derek was great craic and a knowledgeable host. We all also ended up trying all of the whiskeys and dare I say it, even the non whiskey drinkers enjoyed them immensely. He may have even converted a few of us! Even the connoisseurs found a few new favourites that they had previously never come across. I'd highly recommend this experience for everyone to try, regardless of your previous experience with whiskey.

We throughly enjoyed our guided tasting in Galway at MP Walsh with Derek. His obvious extensive knowledge of the history and distillation process of whiskey and outgoing personality make him a gracious host, I highly recommend this program.

We booked Derek for a stag. Derek’s Irish whiskey tasting was exceptional. His knowledge of both the Irish and global whiskey scene is deep, current and genuinely impressive, yet he makes it accessible whether you are a complete beginner or a seasoned enthusiast. This was far more than a lecture. Derek created an engaging, interactive experience, with open conversation, thoughtful back-and-forth and room for every question. Whatever was put to him, he answered with ease, drawing on history, culture, industry insight and a remarkable understanding of the product itself. You leave with a richer appreciation of Irish whiskey, and with no doubt that Derek is one of Ireland’s leading whiskey experts.

Derek is extraordinarily knowledgeable about the history of Irish whisky and its evolution over time - including some of the newest movers and shakers on the Irish whisky scene. Treat yourself to this experience - you won’t regret it. Can’t recommend this highly enough!!

I‘m not a big Whiskey drinker at all, but our tasting experience (+ Irish coffee making class!) was really amazing. Super entertaining story-telling and valuable bottles from his personal collection. Would love to learn more next time I’m in Dublin and would highly recommend this experience to anyone interested in the history and making of Whiskey!😍

Can't say enough about Derek and his fantastic Irish Whiskey Tasting experience. We were return customers, as my husband and I did the Irish Coffee Making class during our visit in Jan '24. This time we brought at group of friends for our own private tasting in the exclusive Michael Collins room at the iconic Bank Bar and saying it did not disappoint is a HUGE understatement. Derek is extremely knowledgeable, patient, kind and very entertaining. The whiskies were diverse and delicious. We will be back again for certain.
