My friend and I were picked up in downtown Nassau by the sister of "klassy chef," Seanette Cooper. She drove us to Seanette's home/catering kitchen on the east end of the island, so we got to see the embassy district on the way. Seanette, an award-winning professional restaurant chef in the past, greeted us with a coconut milk, cream and vodka welcome drink and cloud-like fried conch puffs. She had tenderized the conch and soaked fresh peas in advance. She lent us aprons and introduced us to the ingredients (e.g., tiny dark peas from her own pea tree) before demonstrating techniques and supervising us in their use. Oil popped and soft Bahamian music played in the background. She prepared a mixture of local red pepper and salt and used that along with fresh thyme and garlic and citrus in several dishes, and somehow prepared dipping sauces without ever turning her attention away from us. The late June night was very hot and it was good to take a break from the kitchen while the peas and rice cooked. We toured her back yard and saw what some of the ingredients looked like before they were harvested. The dinner menu included cracked conch, sweet plantains, peas and rice, and lightly fried red snapper topped with sauteed vegetables. Seanette had inquired about allergies and diet issues in advance; both of us could eat everything. We held hands and gave thanks for the food and the hands that prepared it and sat down to beautifully plated dishes. Everything was good, but nothing was spicey hot. As we chatted, we discovered that she had worked at a big hotel in Atlanta where my friend and I live. Her young daughter joined us and showed us some video of her recent dance recitals. With no room for dessert, Seanette gave us each a ripe,home-grown mango from her garden and drove us home, explaining that some of her work is described on Instagram in case we forget something. Polished and relaxed, she has thought of everything.
The class was excellent. Chef has the title AND the credentials to back it up. When our driver heard who was teaching our class, they instantly said how great of a cook she is. That was all the endorsement I needed. The food was excellent, and I think I could legitimately make this food at home, based solely on the instructions given in this class. The class is taught in Chef's home, so it is a bit less "formal" and "bougie" than some might want, but that should ABSOLUTELY NOT DETER you from booking this experience. T he food you prepare, alone, is worth the experience and your time. Book this class.
Seanette was absolutely lovely as was the whole experience. We were contacted ahead of time to arrange a pickup point, and when there were difficulties with parking and meeting, we were easily able to get in contact and find each other. It was a quick drive to Seanette's home, having landmarks and points of interest called out along the way. When we arrived we were greeted with a drink and quick bite of conch before getting into the cooking. Cooking has never been so seamless and enjoyable, and it was great to learn about the local cuisine while preparing the food. All the ingredients were fresh and the guidance was expertly catered to our experience level. After the food was done we sat for a meal together and had wonderful conversation. She even provided some local drinks for us to try on the house. At the end, she went above and beyond by driving us back to port personally, even with pit stops along the way to pick up local candy and rum cakes. We could not be happier with the experience which made our day in Nassau a highlight of our entire cruise.
This was a wonderful fabulous authentic experience…with a wonderful hostess. My husband and I really enjoyed cooking with Seanette. She is easygoing and very knowledgeable. We made an awesome feast of Red Snapper with sautéed veggies, fried Conch seasoned to perfection, fried plantain, glazed carrots and rice with peas from her garden. We absolutely loved meeting Seanette and her sister Simone …. They showed us a video of the 90 year old mother dancing at a party….. I highly recommend this experience…. If you love to cook and meet good people you will love this excursion.

The best part of our vacation! I chose this class for two reasons. Transportation was included. We really were picked up and returned to our residence. Also, we wanted to explore the food culture other than Conch. Chef Seanette came up with several dishes that we prepared and ate. We felt so welcome in her home and comfortable with all of the processes in preparing the food. Chef and her staff went out of their way to show us the food that she grew in her yard and answer questions about the lifestyle on the island. I will definitely have to go back with another visit just for this class and wonderful cuisine.
What an absolutely amazing day with Chef Seanette! We arrived at the cruise terminal and were greeted by our driver (and Seanettes sister) Simone. It was a clean modern van and she gave us a tour of the island on the way to Seanettes home which was quite a nice touch. Upon arrival, we were warmly greeted by Chef Seanette and she gave us an arrival cocktail and gave us a tour of her gardens. We picked fresh fruit and learned about some of the native plants and traditions. We then ventured into the kitchen where she had everything beautifully laid out and waiting for us. We cooked and laughed and learned for the next couple of hours but the time flew by. As we were finishing up with the dishes, she had us sit at a gorgeous table and she plated the dishes and served us the best seafood meal we had ever eaten which was quite and honor. The best part was her sitting and dining with her at her home as she told us more about herself, her family, and about food and culture. As we finished, our driver was waiting on us to get us back to the port in style and in plenty of time. We left with full stomachs and overflowing hearts. If you are in Nassau, book an experience with Chef! You’ll leave with some recipes and memories that will last a lifetime.
Our cooking class with Chef Saunette was hands-down one of the highlights of our trip to Nassau! From the moment we arrived, her warmth and passion for Bahamian cuisine were undeniable. Under her guidance, we prepared an incredible meal featuring fresh local grouper, perfectly seasoned peas and rice, and a rich, flavorful sauce that brought everything together beautifully. Chef Saunette made the experience both educational and fun — she shared local cooking techniques, cultural insights, and even a few family secrets that made the dishes feel truly special. As if the class itself wasn’t amazing enough, on the way back to our hotel we made a quick stop for freshly made conch salad and a cold Kalik Lychee — the perfect refreshment after a satisfying day in the kitchen.
