Nous commencerons par préparer de délicieuses salsas, suivies d'un mole mexicain authentique et traditionnel, de savoureuses enmoladas et de riz mexicain. Vous serez renseigné sur les ingrédients, vous parlerez des valeurs culinaires et nutritionnelles, et comment préparer et cuisiner chaque partie du repas. Nous sommes toujours végétariens, végétaliens ou sans gluten si cela vous intéresse. Nous discuterons de l'histoire et de l'importance culturelle de la taupe et de la façon dont elle était autrefois la «nourriture des empereurs», réservée uniquement à la classe supérieure de la société maya et aztèque. Au cours de la leçon, vous serez incité à découvrir votre environnement : le salon cosy avec sa cheminée et sa bibliothèque ; et la cour environnante avec ses jardins biologiques et ses paysages magnifiques. Après avoir préparé le délicieux repas, nous nous asseyons et dînons, engageant une merveilleuse conversation. En guise de bienvenue, nous dégusterons une boisson au chocolat pur cacao et beaucoup de délicieux vin mexicain à tout moment. Le tout entouré d'un environnement magnifique et tranquille.

Absolute must do experience when visiting. The food was fantastic and Miguel was so delightful, patient and informative. I have a new understanding of the preparation of mole and a higher respect for the process. Perfect for beginners. Also the property is stunning
Unique, personal, one of a kind authentic experience. We had 6 total people, 4 adults, a 17 yo and 13 yo. Miguel was amazing and so patient with everyone’s cooking skills. And the venue was in an amazing property.
Beautiful venue. Great instructor with a wonderful sense of humor, One, knowledgeable and sharing recipes from his Mexican grandmother. Small class of seven. Everyone agreed it was the highlight of our trip.

From the moment we stepped onto the stunning property we were transported to the realm of authentic Mexican cooking. Chef Miguel's passion for cooking is fueled by his appreciation of the cultural history pertaining to the dishes we were making and the attributes of each ingredient and tool...be it nutritional, historical or spiritual. As he guided us through each step he masterfully wove all of this information into his presentation. By the time we sat down to eat our mole I completely understood why this is such an important dish in Mexico. We were eating a dish with ingredients gifted by the God's. I will never again mindlessly use my molinillo when I make Mexican hot chocolate. I now know the task is massaging my heart and to cook with a heart full of love is to infuse the food with that love which subsequently serves to physically and spiritually nourish the recipient. Thank you Chef Miguel for such a wonderful experience.
What a treat! Our chef was fun, prepared, knowledgeable and made this class special for all of us! I learned so much about mole, the ingredients, the history...so much more than just a recipe. I highly recommend to anyone who enjoys being in the kitchen and learning about the culture through food.
