Siga sus papilas gustativas en el corazón de la región de amantes de la gastronomía más famosa de Italia en esta excursión de un día a Emilia-Romaña desde Florencia. Este tour te ofrece la oportunidad de descubrir de primera mano cómo se elaboran productos reconocidos mundialmente por su sabor y alta calidad. Esta región es famosa por Parmigiano Reggiano, Vinagre Balsámico, Vino Lambrusco y Prosciutto. Lo más probable es que ya esté familiarizado con estos productos, pero ¿sabía que los originales se producen exclusivamente en Emilia-Romaña? Todo el día disfrutarás de cuatro degustaciones diferentes: Degustación de queso parmesano, jamón Prosciutto, Lambrusco y Vinagre Balsámico.

Itinerario
Le recogeremos en su alojamiento en Florencia a las 7:00 h. Nuestro conductor normalmente estará en su dirección a las 6:45 a. m. Luego nos dirigiremos hasta el caseificio, tardaremos aproximadamente 1 hora y 45 minutos.
En este caseificio (fábrica de quesos) te introducirás en el universo del queso parmesano y conocerás sus secretos. Detrás de cada rollo de Parmigiano Reggiano hay más de lo que parece, debido a la intrincada receta tradicional detrás y las condiciones controladas de todo el proceso. Verá a los queseros trabajar y será testigo de todo el proceso. El recorrido por la fábrica finalmente lo llevará a la sala de envejecimiento ("stagionatura" en italiano), donde admirará filas y columnas de quesos que perfuman el aire. La fábrica produce más tipos de queso, todos orgánicos. El recorrido por el caseificio terminará con una degustación de diferentes tipos de queso parmesano y ricotta acompañados de productos locales.
Hoy Acetaia Sereni es líder en la producción de vinagre balsámico tradicional de Módena y una amplia gama de condimentos agridulces. Aquí tendrá un almuerzo tradicional en el restaurante de la propiedad que tiene vista a un paisaje impresionante. El almuerzo se centra en platos típicos de la región de Emilia-Romagna que se combinan mejor con diferentes tipos de vinagre balsámico. Luego, tendrá un recorrido privado por las bodegas, recibiendo una explicación completa del proceso de fabricación del vinagre balsámico: desde el prensado de las uvas y la ebullición del mosto, hasta los pasos de filtración y mezcla. La visita finalizará con una degustación de vinagre balsámico.
Prosciuttificio Leonardi nació en 1988 a partir de una vasta experiencia en el sector del sacrificio y procesamiento de carne de cerdo. 1988 es también el año de incorporación de la empresa a la ”D.O.P.” de Módena. Prosciutto Consortium, que elabora todos sus productos etiquetados según el esquema de calidad de producto de la UE con DOP (Denominación de Origen Protegida). Esta fábrica se enorgullece de mantener altos estándares biológicos de producción y producir exquisitos jamones curados en seco. Es un proveedor confiable para el restaurante Gucci en Florencia y los restaurantes de primera clase de Massimo Bottura. Recorrerás la fábrica, visitarás las salas de elaboración y comprenderás cómo funciona la elaboración del jamón, desde la recepción de la carne hasta el producto final. Tu visita terminará con la degustación de una amplia gama de sus productos: jamones tanto crudos como cocidos, como culatta, lardo, salami, prosciutto cotto, prosciutto al tartufo. Los embutidos irán acompañados de media luna, también conocida como tigelle, que es un pan típico de la zona.
Fattoria Moretto está dirigida actualmente por Fausto y Fabio, la tercera generación de la familia Altariva. Los orígenes de la bodega se remontan a principios de la década de 1960, cuando su abuelo, Antonio Altariva, trasladó a la familia de Pavullo nel Frignano a las colinas de Castelvetro para iniciar una empresa vinícola bajo un contrato de aparcería. En 1995, Fausto decidió convertir el cultivo de la viña al método de "producción integrada", marcando el primer paso hacia la agricultura ecológica. Hoy en día, la producción de Fattoria Moretto se centra en expresar las características únicas del territorio de Lambrusco Grasparossa, enfatizando la calidad sobre la cantidad. En el corazón del territorio de Lambrusco Grasparossa, a unos 200 metros sobre el nivel del mar, Fausto y Fabio Altariva cultivaban con sentimiento sus tierras. La finca, totalmente gestionada con métodos ecológicos, se extiende a parcelas no adyacentes en las colinas de Castelvetro. El área tiene buena ventilación que templa el calor del verano y protege a las plantas de enfermedades.

A once-in-a-lifetime experience! My mom and I had an amazing time exploring where so many of our favorite foods and wines are made. Every stop featured local, family-owned businesses, which made the tour feel authentic and special. From start to finish, angel was an absolute delight! He guided us and explained everything at every factory we explored. THIS is the tour you want AND have to do!!! At first we were hesitant on choosing this tour given the cost. Then, after a well traveled friend reviewed the itinerary and said that it sounded great, we committed and hoped for the best. We were not disappointed. Angel was ready to pick us up right on schedule right from our hotel. Shortly after from pulling away from the hotel, Angel cordially introduced himself and we had a great introduction conversation. He then commenced to review the day's itinerary. There was a modification due to a vendor's request and he said that it would just switch a couple stops and not change the day's activities or timing. We appreciated the honesty and explanation. From the first stop to the last, we were amazed at the knowledge Angel had about the locations and products from all our stops. Even more appreciated was his smooth delivery and willingness to answer questions. It was no surprise that he had a great relationship with the staff of every establishment. As said above, this tour is not to be passed by. You will not regret it. Just sit back, relax and get immersed in this fabulous experience.

What a great food experience! Our driver, Stefano was fantastic, very knowledgeable and friendly. What an experience the day was- learning about parmigiana cheese, prosciutto, and balsamic vinegar and of course a wine tasting along the way. This was such an amazing experience! Our guide Elizabeth was awesome and made us feel comfortable right away. It was also a lovely detour to see the countryside after days of city jetsetting. We felt like VIPs all day! Come with empty stomachs and lots of energy as it will be a full day of amazing food, wine, and views to rival all of Florence.

Our guide Angel was top drawer in every way. He served as driver and the actual guide on a couple of stops. We learned alot about Parmesan, balsamic and parma hams. The tastings were delicious and brought each visit together. Never boring. Great tour for foodies.

What an incredible experience! We were looking forward to this tour for months, but we had no idea how amazing it would be. Our guide, Johnny, picked us up right on time from our hotel and was a fantastic well of knowledge, answering the many questions we had from our time in Italy. Incredibly knowledgeable and a great conversationalist, he made the long (and scenic!) car ride fly by. Each stop was so delicious, from the cheeses to the vinegars to the full meal of pasta and meats.
