Description
Kitchen has always been the fulcrum of this home, where my family is living since more than 7 generations. I have always been fascinated by my grandmother's ability to prepare awesome dishes from Tuscan tradition, always with few, simple but precious ingredients. That cultural heritage was in danger of disappearing: I spent a lot of time cooking with her, trying to learn her recipes and secrets. In the end, I realized that she had given me a bigger gift: I had assimilated her cooking philosophy! Then, I realized that tradition is not a dusty book but a living thing able also to adapt to new conditions, and even improve. I studied ingredient's seasonality, their sustainable production systems, new cooking techniques, techniques of tasting: almost without realizing it, in the meantime, I became Chef and finally, also Sommelier. Since a lot of years, I decided to share this path: a long path that is not yet finished... Giacomo

My husband and I just took a cooking class with Giacomo at his family farm estate and it was wonderful. Giacomo is very passionate about his culture, family history of cooking, and sharing tips and knowledge with others. It was a thorough class learning about the specificity of ingredients and steps to make delicious and homemade pasta dishes and dessert. We made traditional Tuscan dishes including tagliatelle, pici, and tiramisu. We ate all three as well as a traditional bruschetta assortment prepared by Giacomo. Each dish was paired with a specific wine from the region that Giacomo chose. It was all SO good! Thank you to Giacomo and his wife Cristiana, for opening up your home to teach and share delicious meals with others!

One of the best decisions we made on our honeymoon was this cooking class with the Caggiole family. Giacomo and Cristiana welcomed us into their home and we learned so much about food, their family, and Tuscan culture. They patiently taught us how to make homemade pasta and tiramisu from scratch, and eating the food after we worked so hard made the entire experience feel complete. These are people who love what they do and love sharing it. We're back home now and have already impressed our family and friends with our new recipes and techniques! More than the skills though, we keep thinking about the special afternoon we spent in their kitchen. Thank you very much, Giacomo and Cristiana! We understand more than ever that there's no substitute for quality ingredients and patience.

This cooking class with Giacomo was a day we will never forget! Giacomo is incredibly knowledgeable about his product, both food and the wine he pairs with each dish. We prepared pici, tagliatelle, and tiramisu. Giacomo explained each of the ingredients and gave us some tips for how to know you have the highest quality eggs (very important for tiramisu!). He was patient with his demonstrations and helpful when we needed it. It was an amazing experience to hand roll pici and to prepare tagliatelle. The tasting at the end of the class was incredible. Giacomo paired each dish with a wine and explained the pairing. We look forward to trying these recipes at home and bringing a little taste of Italy back to the US with us. We highly recommend this experience!

If you want a genuine Tuscan experience in a beautiful farm with lovely people, this is what you're looking for. Giacomo and Cristiana (and their thoughtful staff and sweet children) make you feel at home from the moment you arrive and then gently and expertly teach you the secrets of authentic home cooking. I'd always been a bit intimidated by home-made pasta and now I can't imagine NOT making it at home. They demystified it and opened a whole new world to me. Grazie!

This is a wonderful experience with a professional chef who is passionate about authentic food and local organic produce Giacomo was meticulous about ensuring we all developed the specific skills to recreate the dishes when at home We made picci and tagliatelle from scratch and tiramisu to his grandmother recipe At the end of the class Giacomo and his team have cooked the pasta you made and added delicious sauces (the picci with local pecorino cheese was a sensation!). All four courses are paired with delicious local wine, curated by Giacomo who is also a sommelier

An unforgettable Tuscan cooking experience! The cooking class at Le Caggiole was one of the highlights of our trip. The instruction was clear, hands-on, and enjoyable, making it easy for everyone to participate regardless of cooking experience. We learned authentic Tuscan recipes using fresh local ingredients and gained a deeper appreciation for the region’s culinary traditions. An amazing hands on experience. We were able to enjoy the pasta and tiramisu we created and Giacomo added wine pairings to the meal. It was a real education in food prep, history of recipes and ingredients. Highly recommend this interactive 1/2 day. We had a great time!!
