Fun learning experience that demystifies making mole, a unique Mexican culinary must-try!

I first discovered mole about 35 years ago, and it was a revelation! However, it has been difficult to find in the US. I was always impressed with the complexity of this flavor, but with so many ingredients, it seemed out of reach. So I was pleasantly surprised with being able to take this class. Jim and Jesse have deconstructed the process so that anyone with some basic cooking skills can learn. Jesse was a great teacher, very relateable, with lots of varied experience in the food space, and he is an excellent listener and customized my experience to what I knew. He even recommended an art gallery that I went to after my class. One thing I learned was that no two people make the exact same mole, and after making it, and this class empowered me to experiment to make my own version of mole. As an added bonus, I learned the little tricks about how to make a proper tortilla from masa. I look forward to learning more when I return to Mexico City!

Memorable and delicious cooking class

We had a lovely and delicious evening cooking a delicious dinner in a beautiful setting. Jim was a knowledgeable and gracious host. One of our favorite travel experiences ever!

Mole Class

Great 3- 4 hour experience learning what makes mole, mole and how to create variations of this dish. The class was engaging, informative a lovely laid back evening of wonderful food and conversation with skills I can bring back home.

Highlight of our trip. Jim is a great teacher, his method is accessible, we ate so well, and the space was so cool. We will be making g mole when we get home.

Just wow

Excellent class- learn all about selecting and preparing mole. I had no idea what goes into making these complex and delicious sauces. There are alot of ingredients, but our instructor walked us through and made it all seem so simple to create amazing dishes. Highly recommend this experience to fully appreciate Mexican cuisine.

Great mole class!

Loved our mole cooking class with Jim! We learned so much and got to make two different types of mole, along with homemade tortillas, in the class. Jim was so kind and knowledgeable, and had some extra touches to make our class special since we were celebrating my birthday. Thank you!!

Great experience with the local chef and a delicious result!

You very well arranged and organized tour in the chefs private apartment. Learned a great deal about making two kinds of mole, and the resort was delicious. Also learned a lot about the food culture in history of Mexico. Highly recommended!

The definition of home cooking!

Great experience. Made a couple of types of mole. Very patient and knowledgeable. Very recommended. It was perfect for both chefs and novices.

Outstanding class, fantastic results

Jim made the class very interesting, quite informative and basically real fun. Both the tamales and the moles that we made during this class under Jim’s close supervision were unbelievably tasty. Very highly recommended!
