Set in a beautifully restored 17th-century space in the heart of Bordeaux, this workshop offers a rare chance to craft the city’s iconic pastry—the canelé—from scratch. While canelés are sold across the city, including at the famed Baillardran and local favorite La Toque Cuivrée, few places invite you to make them yourself using traditional copper molds. Led entirely in English by native speakers—who are also locals able to translate life in France—this class blends hands-on technique with cultural insight into Bordeaux’s rich culinary heritage. Offering a warm, immersive setting where guests connect with local traditions, ask questions freely, and savor what they’ve made, this experience goes beyond baking. Important Information

  • Wheelchair accessible
  • Infants and small children can ride in a pram or stroller
  • Public transportation options are available nearby
  • We have tried to make our space as accessible as possible, that being said, the surrounding streets date to the 17th and 18th century and may be difficult to navigate for some. We are on the ground level without stairs but there are slight door frame transitions to negotiate and our primary work area is a standing counter height with tall stools. We do have an accessible toilet and sink. We will do our best to work with you to create a wheelchair accessible workspace, if needed but please alert us in advance of your visit so we may prepare.
  • Important Note: We only serve alcoholic drinks for travelers 18 years old and above. Minor travelers below 18 years old will be served non-alcoholic drinks.

Came for the Canele and stayed for the gateau basque

AMAZING EXPERIENCE!

Our group of 13 travel agents participated in the pastry class and we had so much fun. Not only was the food delicious, but the kitchen was a beautiful space & hospitality from Erica & Chef Dan was above & beyond. Chef Dan made us all feel comfortable & kept us cracking-up the entire afternoon. We made awesome memories & HIGHLY recommend cooking classes at the Gastronome!

Wonderful culinary experience in Bordeaux

This class was lots of fun and very informative. Daniel was warm and friendly and a great teacher. Also funny ! The time went by very quickly and in the end, I would feel confident making the recipes we learned in class. In fact, I can’t wait to try the Gateau Basque when I go home. I would highly recommend this class for anyone who wants to enjoy some regional treats. Thank you!

Gastronome experience the best!

My wife and I were very warmly welcomed by Daniel and his wife Erica. We got a great tour of the market where buys his fresh meats,fish and produce. Once back at their wonderfully renovated “grotto” style kitchen classroom, we were entertained with great starters and drink while learning some of the nuances of great French cooking. Easy to find location next to the cathedral St. Michel and a three minute walk from the tram stop. I highly recommend this experience!

Best cooking class and experience!!

We had a fantastic experience! Chef Daniel and Erica were phenomenal! He explained in both French and English with great clarity and ease! Our bakes were SO delicious and it was a wonderful family experience for us. I highly recommend this venue and you will not be disappointed!! It was fun

More Than a Class—A Beautiful Family Memory

We had the most wonderful time at this private pastry class with Daniel and Erica. From the moment we arrived, they made our entire family feel welcomed and relaxed even traveling with teenage boys! The class was not only incredibly informative, but also genuinely fun, filled with laughter, generosity and delicious treats. Daniel was an outstanding teacher and Erica a wonderful host. Their warmth and enthusiasm set the tone right away, and everyone felt included and engaged throughout the experience. What truly stood out was how much our boys loved it—so much so that when we got home, our son was inspired to make canelés for his grandmother, which was such a special and unexpected takeaway from the class. We learned a lot, ate well, and left feeling very happy. It was exactly the kind of experience you hope for when traveling as a family: joyful, memorable and inspiring. I cannot recommend this experience highly enough and very much hope to return for another class in the future.

Experience not to be missed!

If you’re ever in Bordeaux, do yourself a favor and book a class with Chef Dan at The Gastronome Bordeaux. We learned the art of making Bordeaux’s signature pastry, the canelé, and Dan guided us through every step with patience, expertise, and unmatched humor. He explained the delicate science of baking and how to achieve that perfect caramelized crust with a custardy center. It felt less like a class and more like being welcomed into a friend’s home, except that friend happens to be a world-class chef. Even though he’s more of a chef than artist, his wall of the Bordeaux area marked with corks from the local wineries was a masterpiece! This was truly an unforgettable experience, and I cannot recommend The Gastronome Bordeaux highly enough. Five stars is NOT enough! Thank you, Chef Dan, for sharing your knowledge, your warmth, and your champagne with us!

Warm and with fun

Here we would be welcomed nicely and the whole seminar was very funny and fun. You learn a lot about the art of baking and can taste everything

In the class, we loved learning the technique behind caneles and madelines!

We had such an incredible time at the Pastry Class! I would highly recommend this class and it was such a fun activity for a mother daughter trip!
