Während die georgische Esskultur langsam aus der Tiefkühltruhe aus der Sowjetzeit erwacht, schauen die Köche von Tiflis über die Grenzen ihres Landes hinaus und beleben und bewahren gleichzeitig die einzigartigen kulinarischen Traditionen Georgiens. Der offene Geist der Seidenstraße ist zurück in der Stadt und an diesem epischen Tag des Essens bekommen wir einen Vorgeschmack darauf, worum es geht. Unser Tag beginnt dort, wo Tiflis vor Jahrtausenden seinen Anfang nahm, bei den natürlichen heißen Quellen im ältesten Teil der Stadt. Hier bieten Moschee, Synagoge und georgisch-orthodoxe Kathedrale ein Panorama, das viel über die Vielfalt der Stadt und ihre Geschichte als wichtiges Handels- und Kulturzentrum und wichtige Station entlang der alten Seidenstraße erzählt. Die strategische Lage von Tiflis machte es zu einem begehrten Ort für die Besetzung, und es gibt keinen Mangel an Eroberern, die durchzogen: Römer, Byzantiner, Mongolen, Chasaren, Araber, Perser, Osmanen, Russen und schließlich die Sowjets.

Wir beginnen in der atmosphärischen Altstadt von Tiflis, wo wir ein unterirdisches aserbaidschanisches Teehaus besuchen werden.
Wir werden uns auf den Weg zu einem kirchlichen Laden machen, der Produkte direkt aus orthodoxen Klöstern verkauft – langjährige Bastionen der handwerklichen Produktion – hier werden wir einige atemberaubende Leckereien probieren
In den Seitenstraßen in der Nähe des Freiheitsplatzes besuchen wir eine ungewöhnliche Weinbar für eine Verkostung der besten kleinen Weinproduzenten Georgiens.
Wir besuchen die älteste Kirche in Tiflis, ein architektonisches und kulturelles Kleinod.
In der Nähe dieses berühmten Theaters setzen wir uns für Shkmeruli, ein brutzelndes Hühnchengericht und Certpeice eines jeden georgischen Festes.
In der Nähe des Parlaments besuchen wir eine Khinkali-Meisterin und probieren ihre frisch zubereiteten Knödel.
Eine weitere beeindruckende Kathedrale, an der wir auf dem Weg zu einem handwerklichen Käsegeschäft für eine Verkostung vorbeikommen.

This tour exceeded expectations in every way. Our guide, Tamra, gave us the best possible first impression of Georgia, the people, the culture, and the history. The information provided and the robust discussion definitely enhanced our overall experience. The food…I can’t even describe how much we all enjoyed it. Not only the taste, but learning about the traditions and importance of certain dishes. I am not going to embarrass myself by trying to name the dishes (!), but suffice it to say the four of us did our best to clean every plate! Further, the pacing of this tour allowed us to fully enjoy each dish, and each tasting was given an appropriate amount of time and space between courses. Highly recommend this entire experience.
