Seite moles, Cinco Rstrellas!

This experience was one of the best ones I've had in travel. Hector and his sister were extremely personable, and a wealth of information. We tasted seven moles, each made in-house. It's not just tasting on a chipper spoon, it comes as a mezze or tapa. It was definitely filling! Hector starts the experience by explaining about oaxaca's geography and its place within mexico. It is one of the most culturally and biodiverse regions of North america! He then explained and had a smell different kinds of chiles, spices, and herbs. We would be tasting for those flavors in each of the moles to follow. Has one does with a wine tasting, we started with the simplest and lightest, red, progressed through yellow, and then all the way up to a black bow light, which actually was black. Hector explained it was due to a difficult to find chile, which rarely finds itself outside of oaxaca. I'm intentionally comparing the mole tasting to wine tastings, because the flavors were so vomplex and surprising! Although this was not a cooking class, he shared enough guidelines and ideas for me to experiment when I get back to my own kitchen. We also had a mezcal tasting. The old cliche, if it grows together, it goes together, it was absolutely true here. I learned that Mezcal is the sophisticated older brother of tequila. There are dozens of different cacti that can be used in the scale, versus the only two in tequila. I learned the difference between copper distillation and terracotta. I picked up a real appreciation for spirit I knew very little about, just thought it was smoky tequila. Finally, he recommended several restaurants. Michelin agrees with a couple of them! It's hard to imagine a better experience if you are an avid cook or enthusiastic eater.

Hector was our host for...

Hector was our host for the tour and his sister was the chef! He gave us so much interesting information about the history of Mexico, Oaxaca, and the cuisine! Then, we got to try each of the 7 moles with a bit of food(rice, chicken, etc), so you get plenty to eat! The moles were all SO good!! I would definitely recommend this experience if you want to learn more about mole and get to try it! One thing to keep in mind, the GPS takes you to a slightly different house, go instead down the small side road, Hector's home is at the end of that road. We also had a little mix up with the start time (though it all worked out fine), but I would just recommend verifying the start time the day before.

Moles, Moles, Moles!

This experience was one of the highlights of our trip to Oaxaca. My suggestion--do not miss this very thorough, engaging, informative, and tasty introduction to the moles of Oaxaca. Hector was delightful and very knowledgeable about the area's history and culture. We learned about the nuances of the different recipes and the cultural significance of the moles. The moles were better than the moles we had at some of the "fancy" restaurants in town. Hector's descriptions, the presentation of the moles, and the location of the tasting (in a comfortable space in front of his home) were top tier. GPS seems a bit wonky and might take you a few doors from his place so if you take a taxi or Uber (as we did) you might have Hector explain to the driver his exact location. Highly recommend this delightful outing.

Tasty moles tasting!

Hector did a fabulous job teaching us about the history and culture of Oaxaca. His presentation of the various moles was engaging and tasty! We learned so much and really enjoyed tasting all the moles!

Great mole overview

My wife and I thoroughly enjoyed the experience. Hector does a great job of keeping everyone engaged. He has a creative way of showing how the moles are prepared without this being a cooking Class. I would not recommend purchasing the unlimited Mezcal. It really isn’t that good of Mezcal and one shot is enough.

Tasty trip not to be missed.

If you teally want to know Oaxacan cuisine this is just a great way to learn about it. Hector was fun and knowledgeable that would have packed him in our suitcase to take home. Loved this experience and really helped making choices thru out our trip!

The restaurant owner was...

The restaurant owner was really good and passionate about his mole. Having recipes passed down from his grandmothers is awesome. So great to keep up with the tradition.

The mist informative two hours about mole

The class was so informative and very interesting and fun. I learned about all of the different spices and the chilies and and herbs and thickeners that went into the different moles. The seven moles were all fabulous
