Efterhånden som den georgiske madkultur langsomt dukker op fra sovjettidens dybfrysning, kigger Tbilisis kokke ud over deres lands grænser, mens de også genopliver og beskytter Georgiens unikke kulinariske traditioner. Silkevejens åbne ånd er tilbage i byen, og på denne episke spisedag får vi en smagsprøve på, hvad det handler om. Vores dag begynder, hvor Tbilisi startede for årtusinder siden, ved de naturlige varme kilder i den ældste del af byen. Her giver en moské, synagoge og georgisk-ortodoks katedral et panorama, der fortæller meget om byens mangfoldighed og dens historie som et vigtigt centrum for handel og kultur og et centralt stop langs den gamle Silkevej. Tbilisis strategiske beliggenhed gjorde det til et ønskeligt sted at besætte, og der er ingen mangel på erobrere, der passerede: romere, byzantinere, mongoler, khazarer, arabere, persere, osmannere, russere og endelig sovjeterne.

Vi begynder i den atmosfæriske gamle bydel i Tbilisi, hvor vi besøger et underjordisk azerisk tehus.
Vi går til en kirkedrevet butik, der sælger produkter direkte fra ortodokse klostre – mangeårige bastioner med håndværksmæssig produktion – her vil vi prøve nogle fantastiske lækkerier
I baggaderne nær Freedom Square vil vi besøge en usædvanlig vinbar for en smagning af Georgiens fineste vinproducenter i lille skala.
Vi besøger den ældste kirke i Tbilisi, en arkitektonisk og kulturel skat.
I nærheden af dette berømte teater vil vi sætte os ned til shkmeruli, en sydende kyllingeret og et stykke af enhver georgisk fest.
I nærheden af Parlamentet vil vi besøge en khinkali-mester og prøve hendes frisklavede dumplings.
Endnu en fantastisk katedral, vi kommer forbi på vej til en håndværksmæssig ostebutik for en smagning.

We had an amazing food tour in Tbilisi and would highly recommend it. Our guide, Maka, was warm, knowledgeable, and made the whole experience feel relaxed and authentic. We tried some incredible Georgian dishes, including khinkali, khachapuri, and other local specialties, along with delicious Georgian wines. It was such a great way to learn more about the culture and discover foods we might not have ordered ourselves. A real highlight of our trip!

This tour exceeded expectations in every way. Our guide, Tamra, gave us the best possible first impression of Georgia, the people, the culture, and the history. The information provided and the robust discussion definitely enhanced our overall experience. The food…I can’t even describe how much we all enjoyed it. Not only the taste, but learning about the traditions and importance of certain dishes. I am not going to embarrass myself by trying to name the dishes (!), but suffice it to say the four of us did our best to clean every plate! Further, the pacing of this tour allowed us to fully enjoy each dish, and each tasting was given an appropriate amount of time and space between courses. Highly recommend this entire experience. What a wonderful day with Maka!! We started our day in Tbilisi near the sulfur baths. Maka led us to a cozy cafe for some tea and khachapuri. Over breakfast, we learned some the history of Georgia and Tbilisi. Maka’s background in history provided a lot of insight into the culture and she provided us with so much knowledge and context. We spent the day walking, talking, and eating. Maka made us feel so comfortable, and she was willing to engage with us on difficult topics like politics, religion, and international relations - we feel like gained a very good understanding of the culture of modern-day Georgia. She also has a lifetime of Georgian cuisine knowledge that she was willing to share with us. The food stops were fantastic. The locations were nicely curated and we were able to learn so much about Georgian cuisine - the different types of khachapuri, learning how to eat khinkali correctly, finding fresh-baked shoti, pkhali, and so much more…delicious and so engaging. The shkmeruli stop was so good! While the price of the tour was more than we wanted to spend, we were so happy that we did. It was worth every penny. By the time the tour ended, we felt so much more competent on our knowledge of Georgian cuisine and Georgian history, and we felt like we gained a new friend in Maka. We’ve really enjoyed our visit to Georgia, and we thank Maka so much for giving us the proper introduction. We highly recommend this tour!!!
