A super fun experience learning about the core ingredients of chocolate and then actually getting hands-on to make it. Edgar was an especially enthusiastic host and instructor. He made the whole experience lively, engaging, and fun. We even learned some Zapotec from him.
This was such a wonderful experience. First, we learned about the varieties of cacao and where they are grown in Mexico. Then we tasted the different types of beans. This moved on to roasting, shelling, and grinding the beans. We then determined the sweetness of our final product and made our own delicious chocolate candies. While our molded chocolates set in the refrigerator, we made chocolate de agua, once again adjusting the intensity and sweetness to personal preference. The instructors were delightful, making the experience that much sweeter! I can't wait to try this at home!
The guide was kind and extremely knowledgeable about chocolate production. There was plenty of opportunity to ask questions and explore the world of Oaxaca chocolate making. Though I originally hoped for a class with other people I ended having a private class as no one else had signed up for that date and time. I had a great time and the chocolate I made was delicious.
What a great experience learning to make chocolate and the culture around it. I love meeting locals that are so passionate about their country and the food they make. I can’t wait to get home and share my chocolates with my loved ones.
A fantastic experience with Thomas who provided a thorough heart-felt explanation of the Oaxacan chocolate making process with lots of hands on time. You can taste the quality/purity made from locally grown cacao. Definitely recommended!

My wife and I had a great class with Tomas. He introduced us to the history and production of the cacao beans as well as an interesting personal story of his grandmother and her inspiration to his chocolate career. We produced from start to finish some delicious candies and a Oaxacan hot chocolate. The whole experience was wonderful and memorable.
