Følg dine smagsløg til hjertet af Italiens mest berømte foodie region på denne Emilia-Romagna dagstur fra Firenze. Denne tur giver dig mulighed for at opdage førstehånds, hvordan produkter kendt over hele verden for deres smag og høj kvalitet er lavet. Denne region er berømt for Parmigiano Reggiano, balsamisk eddike, Lambrusco vin og Prosciutto. Mest sandsynligt er du allerede bekendt med disse produkter, men vidste du, at de originale er produceret udelukkende i Emilia-Romagna? Hele dagen vil du nyde fire forskellige smagsprøver: Parmesanost, Prosciutto, Lambrusco og balsamisk eddike.

Henter dig fra din bolig i Firenze kl. Vores chauffør vil normalt være på din adresse kl. 6.45. Vi kører derefter til caseificio, det vil tage cirka 1 time og 45 minutter.
På denne caseificio (ostefabrik) vil du blive introduceret til parmesanostens univers og lære dens hemmeligheder at kende. Bag hver rulle Parmigiano Reggiano er mere end man kan se, på grund af den indviklede traditionelle opskrift bagved og de kontrollerede forhold under hele processen. Du vil se ostemagere på arbejde og være vidne til hele processen. Rundvisningen på fabrikken vil til sidst føre til aldringsrummet ('stagionatura' på italiensk), hvor du vil beundre rækker og søjler af ostehjul, der parfumerer luften. Fabrikken producerer flere typer ost, alt økologisk. Caseificio-turen slutter med en smagning af forskellige typer parmesanost og ricotta ledsaget af lokale produkter.
I dag er Acetaia Sereni førende inden for produktion af traditionel balsamicoeddike fra Modena og et stort udvalg af søde og sure krydderier. Her får du en traditionel frokost på ejendommens restaurant, der har udsigt over en betagende natur. Frokost er centreret omkring retter, der er typiske for Emilia-Romagna-regionen, der bedst kan kombineres med forskellige typer balsamico. Bagefter får du en privat rundvisning i kældrene, hvor du får en fuldstændig forklaring på balsamicoeddikens fremstillingsproces: fra presning af druerne og urtens kogning til filtrerings- og blandingstrinene. Besøget afsluttes med en smagning af balsamicoeddike.
Prosciuttificio Leonardi blev født i 1988 fra en stor erfaring inden for svineslagte- og forarbejdningssektoren. 1988 er også året, hvor virksomheden tilslutter sig Modenas "D.O.P." Prosciutto Consortium, som laver alle deres produkter mærket efter PDO (Protected Designation of Origin) EU produktkvalitetsordning. Denne fabrik er stolt af at opretholde høje biologiske produktionsstandarder og producere udsøgte tørskinker. Det er en pålidelig leverandør til Gucci restaurant i Firenze og Massimo Botturas førsteklasses restauranter. Du vil besøge fabrikken, besøge produktionslokalerne og forstå, hvordan skinkeforarbejdning fungerer, fra modtagelsen af kødet til det endelige produkt. Fattoria Moretto drives i øjeblikket af Fausto og Fabio, den tredje generation af Altariva familien. I hjertet af området Lambrusco Grasparossa, omkring 200 meter over havets overflade, dyrkede Fausto og Fabio Altariva følelsesmæssigt deres lande. A once-in-a-lifetime experience! My mom and I had an amazing time exploring where so many of our favorite foods and wines are made. Every stop featured local, family-owned businesses, which made the tour feel authentic and special. It truly was an incredible day—we learned so much, enjoyed delicious tastings, and had meaningful, personable conversations with our wonderful guides, Elizabeth and Angel. From start to finish, angel was an absolute delight! He guided us and explained everything at every factory we explored. We didn’t have coffee before leaving for our tour, and he ended up stopping at a cafe for espresso for us. If you’re in Florence, do not skip out on this trip! THIS is the tour you want AND have to do!!! At first we were hesitant on choosing this tour given the cost. Then, after a well traveled friend reviewed the itinerary and said that it sounded great, we committed and hoped for the best. We were not disappointed. Angel was ready to pick us up right on schedule right from our hotel. Shortly after from pulling away from the hotel, Angel cordially introduced himself and we had a great introduction conversation. He then commenced to review the day's itinerary. There was a modification due to a vendor's request and he said that it would just switch a couple stops and not change the day's activities or timing. We appreciated the honesty and explanation. From the first stop to the last, we were amazed at the knowledge Angel had about the locations and products from all our stops. Even more appreciated was his smooth delivery and willingness to answer questions. It was no surprise that he had a great relationship with the staff of every establishment. As said above, this tour is not to be passed by. You will not regret it. Just sit back, relax and get immersed in this fabulous experience.

What a great food experience! Our driver, Stefano was fantastic, very knowledgeable and friendly. What an experience the day was- learning about parmigiana cheese, prosciutto, and balsamic vinegar and of course a wine tasting along the way. This was such an amazing experience! Our guide Elizabeth was awesome and made us feel comfortable right away. It was also a lovely detour to see the countryside after days of city jetsetting. We felt like VIPs all day! Come with empty stomachs and lots of energy as it will be a full day of amazing food, wine, and views to rival all of Florence.

My parents, husband and I on our recent trip to Italy did the Exclusive Emilia-Romagna, Parmigiano-Reggiano, Prosciutto, Balsamic Vinegar Tour with Angel and had the most amazing time! Our guide Angel was top drawer in every way. He served as driver and the actual guide on a couple of stops. We learned alot about Parmesan, balsamic and parma hams. The tastings were delicious and brought each visit together. Never boring. Great tour for foodies.

What an incredible experience! We were looking forward to this tour for months, but we had no idea how amazing it would be. Our guide, Johnny, picked us up right on time from our hotel and was a fantastic well of knowledge, answering the many questions we had from our time in Italy. Incredibly knowledgeable and a great conversationalist, he made the long (and scenic!) car ride fly by. Each stop was so delicious, from the cheeses to the vinegars to the full meal of pasta and meats.
